Dutch Apple Almond Pancake

4 Golden Delicious apples, cored and sliced 1/4″ thick
3 Tbsp. honey
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 cup almonds
2 eggs
2 egg whites
1/2 cup nonfat milk
1 Tbsp. canola oil
1 tsp. vanilla
1 Tbsp. grated orange zest
1/4 cup all-purpose flour
1/4 cup whole wheat flour
1 Tbsp. powdered sugar

recipe directions
Preheat oven to 425*F. Coat 2 nine inch pie pans with nonstick cooking spray; set aside. Coat a large nonstick skillet with nonstick cooking spray and place over medium heat. Add the apple slices and cook until they have softened slightly and are browned in spots, stiring occasionally. Add the honey, cinnamon, nutmeg, and almonds. Cook until apples are tender and mixture is syrupy, about 5 minutes. In a bowl, beat the eggs and egg whites, milk, oil, vanilla, and orange zest until blended. Add the flours and beat until smooth. Divide the batter evenly between the prepared pans. Top each with an equal amount of the apple almond mixture. Bake until golden brown and puffed, about 20 minutes. Remove from oven and dust with powdered sugar. Cut each pancake in half and serve immediately.
