1 medium cucumber
4 oz feta cheese, crumbled
1/2 cup plain yogurt
2 Tbsp. chopped chives
1/4 tsp. salt
1 bag fresh baby spinach, about 8 to 10 oz
2 medium tomatoes
Peel and chop the cucumber. Combine cucumber, feta cheese and yogurt in a food processor bowl and process until smooth. Stir in the chives and salt. Set aside.
Clean and dry the spinach leaves, and cut tomatoes into wedges. In a large bowl, combine the spinach, tomatoes and dressing.
