recipe ingredients
1 lb extra lean ground beef
2 tsp. chopped garlic
1 onion diced
1 28 oz. can tomatoes
3 stalks of celery, chopped
6 potatoes, cubed into bite size pieces
3 carrots, peeled and sliced
1 8oz bag frozen vegetables-green beans, peas, corn, carrots
4 cups low sodium beef broth
1 tsp. basil
salt and pepper to taste

recipe directions
Cook hamburger, onion and garlic in a dutch oven over high heat until cooked. May need to add water to hamburger to prevent sticking. Drain if any fat left. In the same dutch oven add tomatoes, celery, potatoes, carrots, frozen vegetables, beef broth, basil, salt and pepper. Stir together, put on low heat and simmer for 2-3 hours.

    This makes a YUMMY soup! I used only 4 potatoes and that seemed to be quite enough.

    I used ground Turkey instead of beef, only about 3 potatoes and added Mushrooms. It was delicious!
