Crustless Mushroom Quiche

recipe ingredients
2 cups sliced mushrooms
1 onion, diced medium
10 oz. pkg chopped spinach, thawed and sqeezed dry
1/4 cup plain bread crumbs
2 cups skim milk
8 egg whites
1/4 cup Parmesan cheese
1 tsp. garlic powder
1 tsp. Italian seasoning
1/2 tsp. fresh cracked black pepper

recipe directions
Preheat oven to 350*F. In a nonstick skillet, saute onion and mushrooms until almost tender. Add spinach and cook until all moisture is evaporated (about 4 minutes). Add bread crumbs, stir and place into a quiche pan which has been sprayed with nonstick cooking spray. Combine remaining ingredients in medium mixing bowl and pour over vegetables in quiche pan. Bake for 35 to 45 minutes or until firm in center. Allow to stand for 5 minutes before cutting and serving.

    This is good, but recipe should be corrected to show 1 pkg. spinich–10 would be way to much. Also broccoli or asparagus works really good in this.

    I rated this recipe a 10 for ease and taste. I substituted fresh basil and oregano for the dry Italian seasoning. It was so delicious. I would imagine you could use your imagination with this basic recipe. I use it for taking my breakfast to work as it heats up nicely in the microwave. Loved it, thanks. Kathleen

    Very tasty. A little messy to make but worth it. I topped it with a little salsa which added a nice flavor.

    This tastes very nice…easy to make and not time consuming. I tried salsa suggested by R G. Really adds a good flavour.

    I thought the amount of spinach was good, but i would add a little bit more mushrooms and less onion. It was really great, I will make this again.

    I made this and LOVED it!!!!! However, after I made it, I realized I left out the skim milk. It was so fabulous that way. I made it again with the milk and didn’t like as much. I will continue to make this recipe, sans the milk. ENJOY!!!!!
