recipe ingredients
12 ounces dried penne pasta
12 ounces light firm tofu, drained
1/4 cup oil packed sun dried tomatoes, drained
1/4 cup chicken broth, vegetable broth, or Pacific no-chicken broth
1 tsp. dried oregano
1 tsp. dried basil
1 to 2 chipotle peppers in adobo sauce
2 cloves garlic, minced
1/2 tsp. salt

recipe directions
Cook the pasta according to package directions. Drain well and return to pan and keep warm. Meanwhile, in a blender container or food processor bowl, combine remaining ingredients. Cover and blend until nearly smooth. Toss with hot pasta; heat through. If desired, garnish with slivered fresh basil leaves, cherry tomatoes, and fresh grated parmesan cheese.
