I made this over the weekend for a group of friends. Everyone loved it and it kept well in the fridge. I makes a huge amount.

I’ve made this several times recently, everyone loved it. It is great as a dip on tortilla chips, ate it as a side relish dish, and we used it as the topping for a salad. Add a chopped jalapeno if you want a little punch in it.
