recipe ingredients
8 oz. skinless, boneless chicken breast halves
2 Tbsp. balsamic vinegar
2 Tbsp. water
1 Tbsp. olive oil
1 clove garlic, minced
1/4 tsp. salt
1/4 tsp. fresh cracked black pepper
8 cups mesclun
2 medium pears, thinly sliced (or substitute apples
2 oz. semisoft goat cheese, cut into 1/4 inch thick slices
1/4 cup finely chopped pecans

recipe directions
Broil chicken on a broiler pan 4 or 5 inches from heat for 12 to 15 minutes, or until done, turning once. (Or use grill) Cut chicken breasts diagonally into thin slices. Meanwhile, combine vinegar, water, oil, garlic, salt and pepper in a jar and shake well; set aside. Divide mesclun, chicken, pears and cheese among 4 plates. Drizzle with dressing and sprinkle with pecans.
