1 lb. French bread, cut into 1/2 inch to 3/4 inch slices, crusts removed
2 cups (8 oz) shredded reduced fat cheddar cheese
3 egg whites
4 cups skim milk
1 tsp. grated fresh onion
1 tsp. dry mustard
1/2 tsp. salt
paprika to taste
Spray 9×13 inch pan with nonstick spray. Place half of bread slices in bottom of pan, with edges slightly overlapping if necessary. Sprinkle with 1 1/4 cups cheese. Place remaining bread slices on top of cheese. Whisk eggs and egg whites in large bowl. Add milk, onion, mustard and salt, whisking until well blended. Pour evenly over bread and cheese. Cover with remaining cheese and sprinkle with paprika. Cover and refrigerate 1 hour or overnight.
Preheat oven to 350*F. Bake about 45 minutes or until cheese is melted and bread is golden brown. Let stand 5 minutes before serving.
