Calcutta Chicken and Apple Salad

recipe ingredients
8 oz. fresh spinach, torn (6 cups)
1 head romaine, torn (6 cups)
2 green onions, thinly sliced
2 Tbsp. cashews, chopped
1 1/2 red apple, cored and thinly sliced
4 boneless, skinless chicken breast halves, cooked and chopped or shredded
3 Tbsp. apple juice
2 Tbsp. salad oil
2 Tbsp. low-fat plain or pineapple yogurt
1 Tbsp. white wine vinegar or white vinegar
1 Tbsp. chutney
1 1/2 tsp. Dijon-style mustard
1/4 tsp. curry powder
1/8 tsp. salt
1/2 of a small apple, cored, peeled, and finely grated

recipe directions
In a large salad bowl combine the spinach, romaine, green onion, cashews, sliced apples, and chicken. Combine remaining ingredients in a jar and shake well. Toss with salad and serve.

    This is delicious. I substituted OJ for the apple juice.
