Basmati Rice Pilaf and Pecans

recipe ingredients
2 cloves garlic, minced
2 tsp. olive oil
1 cup basmati rice
2 1/2 cups water
2 tsp. instant chicken bouillon granules
2 tsp. finely shredded lemon peel
4 oz crimini or button mushrooms, sliced
4 green onions, thinly sliced
1/4 cup chopped red sweet pepper
1/4 tsp. salt
1/8 tsp. freshly ground black pepper
2 Tbsp. chopped toasted pecans

recipe directions
Cook garlic in oil in a medium saucepan for 30 seconds. Add the rice, water and bouillon granules; bring to a boil. Reduce heat, cover and simmer 10 minutes. Add remaining ingredients except pecans. Cover and continue cooking 10 to 15 minutes more or until all liquid is absorbed and rice is tender. Stir in toasted pecans and serve.
