Basil Chicken Salad

recipe ingredients
1/4 cup plus 2 Tbsp. nonfat mayonnaise
2 Tbsp. fresh lemon juice
2 tsp. dijon mustard
1/4 tsp. hot sauce
1/8 tsp. white pepper
3 cups chopped cooked chicken breast meat
1/2 cup chopped celery
1/4 cup chopped green onions
1/4 cup shredded fresh basil
6 cups shreeded fresh spinach
1 1/2 Tbsp. pine nuts (optional)

recipe directions
Combine first 5 ingredients and stir well. Combine chicken, celery, green onions and basil in a medium bowl. Add the mayonnaise mixture and toss gently.

Place 1 cup spinach on each of 6 salad plates. Spoon chicken mixture evenly over each plate. Sprinkle with pine nuts.

    I modified this recipe by using dried basil and ommitting the pine nuts (couldn’t find either one at the grocery store). It was delicious and I will make it again.

    I’m vegetarian, so I used Quorn’s chick’n tenders–it came out awesome! I served it over lettuce and spinach for a summer night dinner.
