I would recommend tenderizing the chicken ahead of time, very easy and tasty.
I tried this as an alternative to regular chicken. I found it easy to amke, but whe it was cooked, the sauce was really watery. I would have liked it to have a sauce that would stick to it and the rice I served with it. Overall, the taste was really good.
To solve the thickening sauce problem, I uncovered the chicken the last 10 minutes or so and it helped a little. This is an excellent recipe with used for chicken tenders as well.
