Baked Potato Soup

recipe ingredients
4 large baking potatoes
1/2 cup reduced calorie margarine
1/2 cup flour
6 cups skim milk
1 teaspoon salt
2 teaspoons pepper
1 medium onion, chopped
2 green onions, chopped
4 slices cooked bacon, crumbled
6 ounces light sour cream

recipe directions
Wash potatoes and bake at 400 degrees for about an hour, or until done. Cool. Cut potatoes in 1/2 inch cubes. It is not necessary to peel skins. Melt margarine in large pan over low heat and add flour, stirring until smooth. Cook one minute, stirring constantly. Over medium heat gradually add milk and stir constantly until mixture thickens and bubbles. Add potatoes, salt, pepper, onions and bacon. Cook until thoroughly heated and onions soft. Soup will thicken more as potatoes soften. Add sour cream and stir before serving.

    This is my one of my family’s all time favorite recipes. They actually ask for this low-fat soup. It is a very good winter lunch or dinner.

    I love this soup. I did the potatoes in the microwave to cut down on prep time. It is thick and warm and very tasty. A keeper!

    This a very good soup I make all summer long. I use homegrown potato in it that why I make all summer long and I bake the potato in the oven it gives the soup a better favor.

    The soup is pretty good. I think 2 teaspoons of pepper is way too much though. I wish I would have tasted it after adding only 1 teaspoon. Its very spicy with 2.

    It was ok, really bland so I added 4 oz velveeta light, and some celery seed…made it much tastier!

    This is my favorite potato soup recipe. I did cut down on the pepper also. Very thick and delicious.

    i made this for family and friends. they didn’t know it was low fat. everyone loved it. i put a pinch of garlic and herb to add more flavor. i will make it again.

    I used leeks instead of onions then added broccoli, which really makes it taste like a loaded baked potato! Plus, it gives another veggie for Weight Watchers for free points.

    I don’t know why I am the only person this has happened to, but it came out very thick,like a thick sauce, not even close to soup. Next time I will use half the flour and less pepper. Otherwise it has a really good flavor.
