Baked Frittata Ole

recipe ingredients
1 1/2 cups potatoes
1 Tbsp. oil
1/2 cup lean ham
3/4 cup reduced fat cheddar cheese
2 cartons (8 oz each) egg substitute
1/3 cup skim milk
4 oz. can green chili, chopped
1/4 cup green onion
1/2 tsp. dried oregano
1/4 tsp. salt
3 oz. roasted red pepper
1 1/2 cups salsa
1/4 cup cilantro

recipe directions
Preheat oven to 350*F. In a 10-inch oven-safe skillet, cook potatoes in hot oil, uncovered, over medium heat for 5 minutes, stirring occasionally. Cover and cook 5 minutes more or till tender, stirring once. Remove from heat. Sprinkle ham and 1/2 cup of the cheddar cheese over the potatoes. In a large mixing bowl stir together egg product or eggs, milk, chili peppers, chopped green onion, oregano, and salt. Pour into skillet. Arrange the pepper strips spoke-fashion on top of frittata. Bake, uncovered, for 25 to 30 minutes or till center is just set and knife inserted comes out clean. Sprinkle top with remaining 1/4 cup cheddar cheese. Let stand for 5 minutes. Meanwhile, in a small saucepan stir salsa and cilantro together, heat through. Cut frittata into wedgesand serve with salsa.

    I made this for dinner last night — first time I’ve ever made a “frittata”. It was DELICIOUS! My husband raved about it then and he’s still raving about it this morning, declaring it “one of the best things you ever made” — and I cook A LOT! He hates anything “lite”, “low fat” or “lo cal” so I didn’t tell him about the egg substitute until after dinner. He couldn’t tell that they weren’t real, whole eggs! Super dish! Will definitely make this again!
