recipe ingredients
2 lbs catfish fillets (6 pieces), rinsed and dried
3/4 cup lowfat buttermilk
1/4 tsp salt
1/4 tsp hot pepper sauce
3 oz. (about 30) whole wheat crackers, crushed
2 T margarine, melted

recipe directions
Combine buttermilk with salt and hot pepper sauce in a shallow dish. Place the cracker crumbs on a plate. Dip catfish in milk mixture, then roll in crumbs to coat. Place in a baking dish which has been sprayed with nonstick spray. Drizzle with margarine

Bake at 400* for 15 to 20 minutes, until fish flakes with a fork. Serve with lemon wedges.

    This is a quick and easy recipe that is delicious! I did modify it a bit. Instead of drizzling butter over the top, I sprayed it lightly with Pam Olive Oil spray. Yummy! This one’s a keeper.

    This was HORRIBLE! It says it serves six people, but the recipe only calls for enough crackers to cover two pieces of catfish. The crackers just made the fish odd. It didn’t seem at all like baked, breaded catfish. It had a strange, yucky flavor. We ended up throwing it away and ordering take-out instead!
