Asian Chicken Salad

recipe ingredients
1 cup plain nonfat yogurt
2 cups cooked sliced chicken (approx. 2 breasts)
1 can (20 oz) pineapple chunks, drained
1 cup sliced red bell pepper
1/2 cup sliced scallions
1/4 cup chopped cilantro
2 tablespoons brown sugar
2 tablespoons soy sauce
Hot sauce to taste
6 cups mixed greens

recipe directions
In a bowl, mix together chicken, pineapple chunks, red pepper, scallions and cilantro. In a separate bowl, whisk together yogurt, brown sugar, soy sauce and hot sauce. Toss sauce together with chicken mixture. Let stand at least 20 minutes before serving over a bed of greens.

    Really good chicken salad, but I kept feeling something was missing. I wanted to add more of this and that. Maybe, a few peanuts or walnuts on top would be good. Also, this recipe could use at least 3 times as much cilantro. A good one to try if you like Thai.

    this salad turned out amazing. great recipe with me being on weight watchers, low fat and imaginative. this goes to show low fat and health doesn’t have to be boring. five eggs for sure.

    odumnobles was right– I added some slivered almonds and it made a great improvement. The salad was great and my 5 year old boy even liked it!!
