recipe ingredients
2 1/4 cups buttermilk baking mix
1/2 cup sugar
1/2 cup reduced calorie tub style margarine
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 cup nonfat buttermilk
1/4 cup egg substitute
1 small apple, peeled cored and thinly sliced

Preheat oven to 350*F. Spray a 9 inch springform pan with cooking spray and set aside. In a large bowl, combine baking mix and sugar. With pastry blender or 2 knives, cut in margarine until mixture resembles coarse crumbs. Remove 1/2 cup of the mixture to a small bowl and set aside. To remaining mixture, add baking powder and baking soda. In another small bowl, whisk together the buttermilk and egg substitute. Add to crumb mixture in large bowl and mix until combined. Spread 2/3 of mixture in prepared pan. Arrange apple slices evenly over batter. Spoon remaining batter over apples. Sprinkle with reserved crumbs. Bake 50-55 minutes until toothpick inserted in center comes out clean. Cool on rack 10 minutes, then remove from pan to rack and cool completely before slicing into 12 equal pieces.
