recipe ingredients
1 cup shredded apple (choose a sweet variety such as Red Delicious)
1/4 cup egg substitute
1/4 cup light sour cream
1 1/2 cups all purpose flour
2 Tbsp. packed brown sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. cardamon

recipe directions
Preheat oven to 350*F. Spray a loaf pan with cooking spray, dust with flour and set aside. Mix apple, sour cream, and egg substitute in a large bowl. Stir in remaining ingredients. Spread batter in pan and bake 35 to 40 minutes or until golden brown. Cool in pan 5 minutes, then turn onto a wire rack to finish cooling. Cut into 20 slices.

    Tastes ok, but it’s dry as a bone. I added an extra TBSP of light sour cream, but it turned out to need more than that cause it was still dry, maybe some water too. Exchanged a pinch of cloves for the cardamon, that stuff costs $11 a bottle! And as I have never ever had occasion to use cardamon, I just made do. I also added 1/3 cup of dried sweetened cranberries, and substitued 1 TBSP of Splenda brown sugar for the regular brown sugar. Making it 18 slices at 1.5 WW points each even with the cranberries… I tried smoothing on some strawberry preserves on my slice(1 point per TBSP) and that made all the difference.
