2 large red apples, cored and diced
6 dried figs, pitted and chopped
2 ribs of celery, diced
1/2 cup non-fat lemon yogurt
2 tablespoons slivered almonds, toasted
2 carrots, peeled and grated
Combine apples, figs, celery and yogurt. Divide grated carrots among 4 salad plates. Top each with a portion of apple salad mixture. Sprinkle with almonds to serve.
