Apple Cider Carrots

recipe ingredients
16 ounces frozen baby carrots
1 1/2 cups apple cider
1 tablespoon reduced fat margarine such as Brummel and Brown
1 teaspoon dried thyme
1 tablespoon sugar
1/2 teaspoon salt

recipe directions
Combine all ingredients and bring to a boil. Cover and simmer 10 minutes. Uncover and bring to boil again on high heat. Stir occasionally for 5 minutes, until a thick glaze has formed.

    This recipe deserves a “10″ rating. I have found that if you put a little less of the cider than recommended the glaze comes out a little thicker. Also the left over glaze is delicious with salmon, or any other type of fish, chicken or meat.
