Apple Bran Muffins

recipe ingredients
2 cups Kellogg’s All-Bran Extra Fiber cereal
1 1/4 cups all purpose flour
1/2 cup sugar
1 tsp. cinnamon
1 Tbsp. baking powder
1/2 tsp. salt
1/4 cup raisins
1 1/4 cups skim milk
1/2 cup chunky applesauce
1/2 cup egg substitute (equal to 2 eggs)

recipe directions
Combine cereal and milk in a large bowl and set aside for 5 minutes to soften. Meanwhile, combine flour, cinnamon, sugar, baking powder, and salt in a medium bowl. Add raisins and set aside. Combine applesauce and egg substitute and stir into the cereal mixture. Stir in dry ingredients just until moistened. Divide into 12 muffin cups which have been sprayed with nonstick spray. Bake at 400* about 25 minutes, till lightly browned.

These muffins freeze well and can be thawed overnight or in the microwave. I enjoy them split and spread with fat free cream cheese.

    This recipe is one I am going to keep and make many times over. It tastes great and easy to make. Being a weight watcher I often am hungry in-between meals and i found that this is one thing I can have extra and for only 2 points each

    Great taste and easy to make. Try making the recipe for 24 1 point muffins. They will still be a good size.

    I made the muffins using Splenda instead of sugar. Cut down on the calories. They freeze well.

    This is a very good recipe. My husband even liked it.
    I made only 6 muffins to eat as a 4 point breakfast.

    Easy and yummy. Some of my tasters couldn’t belive it had bran. I couldn’t find plain chunky apple sauce and didn’t want to go overboard with cinnamon, so I used natural apple sauce + 1/2 cup shredded apple, also I replaced raisins with dried cranberries. My family’s requested more!

    These muffins are excellent I use whole wheat flour for mine and they turn out just as good
