Dinner tonight was a crustless quiche. I frequently call this a fritatta because in my mind quiche should have a crust but this is really just a quiche without a crust. It’s dead easy, very yummy, and even using regular cheddar and bacon it is still less than 300 calories for a big filling serving.

That pizza last night was so good (and so easy!) that I had it for breakfast again today. And then I had cupcakes for lunch. Yummy, healthy cupcakes.
Well, they sort of look like cupcakes, but really they are tiny meatloaves topped with mashed cauliflower.

I’m playing around with making quick & easy homemade pizzas. I’m using a Joseph’s Flax Pita as my crust and then going from there. One thing I’ve learned, the oven and the pizza stone need to be hot before you put the pita on it to keep the “crust” from getting soggy.

This is soooo not authentic Carbonara but it’s easy, it fills me up, and is very satisfying.

I tend to find something i like and eat mainly that for a while, then go on to something else for while, so that, by the time I think “boy, I used to really liked that old thing” I forget exactly how I was making it that made it at least reasonably healthy.
