Man, I am having a lot of trouble getting back into the exercise routine. Pure laziness. The spectre of meeting up with an old boyfriend in Vancouver in May is not as motivating as I thought it would be…darn.

OK, positive note: Still on the low carb thing, and yes, I am really getting tired of eggs, but that is my own lack of imagination. Still feeling very good about it. And I have noticed that I haven’t been having nightmares at all the last few weeks. I don’t know if it is related, but I will pretend it is until further notice.

    Here’s something that I loved when I was lo-carbing. Definitely not low-fat but low in carbs.

    Boil a 16 oz. package of cauliflower until really soft. Drain the water and add a 4 oz package of cream cheese and 1 cup of shredded cheese (I like mozzarella or pepper jack). Smush everything together until it’s the consistency of mashed potatoes. To this add about 4 oz. of cooked sausage (I always used the spicy sausage b/c I like spicy food). Pour everything into a casserole dish and sprinkle more cheese on top, bake until melted.

    So yummy!!! I have also made it in a crockpot for family gatherings. It tastes the same but doesn’t get all brown on the top.
