Feeling Tired After Eating So Much Sugar

It’s 37 degrees this morning. I’m feeling creative. I am going to sew today before work.

Weigh-in was 151.2. I’ve had better months, and baking Christmas cookies isn’t helping. Even though I watch what I’m eating, I do eat more than I “should”. But I’m enjoying myself and that’s gotta count for something. Maybe a nice walk today is in order.

I’ve been spending a lot of time with The Mumsy and it has been good at this point. I need to start having some productive time alone now, however. Our big baking day turned into a minor baking day, as I decided that I was too tired to press on. We made eggnog bars which were only satisfactory, but the Mum gobbled some and took the rest home. The caramels (photo in previous entry) turned out magnificent and I gobbled up more than my share for one day. Dinner was chicken stir-fry with Jasmine rice. We split the last piece of apple pie.

I suppose I won’t drone on today. I’ll stop while I’m ahead. Now that I mentioned a walk, I MIGHT feel motivated to do that. I’ll sign off now and save some energy. Okay, I really feel like crawling back into bed. LOL …SleepyMe signing off.

    The sampling, is precisely why I don’t bake like I used to. I really did enjoy it, but I couldn’t control myself around all the goodies. I do my xmas baking after Thanksgiving now. And limit myself to maybe 5 kinds of cookies and thats it. But I can sure understand the pleasure you are getting from this experience….. :) and I do miss it myself!!

  2. I can totally see how you might go overboard on the caramels - homemade and buttery and fresh. Yum.

    Have fun w/ your sewing today (and it’ll keep you away from the sweets!). I’ve fallen off my own sewing. I was sort of put off with my pillow project for a couple reasons, but I do want to get back to it because I still really like the fabric for the front. And I have a pair of denim capris I wore only twice before the zipper broke. Replacing that zipper won’t be easy for me, so I guess it’ll be a learning experience, lol.

    Re your comment re the almond crescent cookies - they are shaped - the dough is rolled into a long log, cut into segments and then shaped into crescents.

  3. Mmmm…caramels are my one weakness! Next time try tossing in a little really good sea salt as it just intensifies the buttery goodness. The apple tart recipe I used was from Barefoot Contessa–just google “French Apple Tart” and you should find it very easily. I did mine in a round, removable bottom tart pan and it turned out fabulously. As for the pork roast, super easy, so here’s my recipe:
    1. Slice up 5 or 6 large onions and cook them down in a large pan until they are golden and carmalized–usually about two hours. I use about one tablespoon of grapeseed or vegetable oil. Take them out of the pan and set aside.
    2. Flour up a pork roast–anything works well–of about two to three pounds and brown it off in the onion cooking pan until it’s just seared and brown. Take out and set aside.
    3. Lay three slices of good bacon–applewood smoked is nice–in the bottom of the pan. Set the pork roast on top. Pour 1/2 cup to 3/4 cup of good unfiltered apple juice over it, pile on the onions and a good handful of fresh thyme (no need to pull off the stems) a sprinkle of salt and a few grinds of pepper and then cover and pop it into a low oven (300 degrees) for a good 4-5 hours. Check it every so often.
    4. Serve with mashed potatoes or polenta.
    Easy and delicious and a real winner. The leftover are great on sandwiches, too.
