Yikes…It’s Sunday!

I haven’t been on the computer very much the past couple of days, and obviously I didn’t blog!

Here’s what I remember from Saturday- (ate out lunch and dinner since Ryan’s out of town- but I made decent choices)

cereal, pills, veggies with Tatziki, Lunch with Jennifer at King Sushi: miso, salad, a couple bites of chicken teriyaki, kingdom roll, Dinner with Carl at Cafe Bernardo: roasted beet and arugula salad and a small piece of chicken

Here’s for Yesterday-

cereal, pills, curried carrot and chicken soup with a walnut roll, tons of water throughout the day.

I did have a little slip up while I was out running errands- I had cookies and diet coke!! (No comments required- I felt horrible about it and then tried to redeem myself by skipping b’day pie) Full disclosure sucks!

We went to my niece’s B’day party last night I had 3 slices of homemade pizza (they were smallish) and salad. I should have had less pizza and more salad- But there were so many delicious flavors to choose from!! At least I left the room for pie and ice cream- even though I could still hear everyone raving about how amazing the pies were I didn’t even have a bite!

8:15 veggie egg scramble with a little bit of ketchup

11:45 1/2c butternut squash soup, 1/2 c lentil stew, 1 walnut roll

12:50 an apple

1:30 I did an amazing 5 miles run/walk for 66 minutes. When I just plugged my nike+ into my computer it crashed and lost my run!!!! I’m livid!

3:00 3 squash raviolis

4:30 a walnut roll dipped in applesauce

6:45 whole foods dinner…1/2 cup of curried chicken salad, 1/2 cup of broccoli and a few bites of cous cous, 4 pieces of yogurt covered peanuts

Today was a tough day, I had lots of opportunities to make bad choices and am so glad that I stayed strong! I even spent 3 hours in the car with an unopened can of diet coke next to me!! I though about going through a drive thru on the way home- but then I thought if I can’t be strong on day 2, how will I be strong on day 3 or 15? If I make bad choices today, I’ll make them everyday and end up stepping on the scale at Thanksgiving hating myself for failing AGAIN!

Walnut Rolls

A few of you have requested the recipe for the walnut rolls that I make. I learned to make them years ago from my Sister-in-Law, Saskia. Enjoy!

Put the ingredients in the  bread maker in the order listed:

10oz warm water

2T olive oil

2 T dried milk

2 T brown sugar

4cups of flour (I use power flour- a mixture of brown rice flour, kamut flour, barley flour, and spelt flour) White works well, I’ve tried parts whole wheat without much success)

1.5 t salt

2.25 t yeast (not touching the salt)

1 cup of walnuts

Let the bread maker do it’s magic. Roll them into balls and bake them at 350 for 12-17 minutes.

Wednesday, November 4 (CLEANSE DAY 1)

So I’ve told many of you about my families weight loss challenge for 2009. In my attempt to win $500 on Thanksgiving (instead of lose $100) I am doing a 21 day cleanse. Drastic Results take Drastic Actions!! For 21 days I commit to eat as well as I possibly can (avoiding processed foods, simple carbohydrates, caffeine, alcohol, and limiting my fat & sugar intake,  beef, and dairy.) I will drink tons of water (at least 100oz a day) and exercise everyday (I’m aiming for 1000 minutes in 21 day!!) I’m using Trader Joe’ s Complete Body Cleanse to help my body detoxify. Wish me luck and willpower!!

8:00 vitamin, calcium, D3 and probiotics, 4 TJ Fiber Pills 3/4 cup of Muesli sweetened with  2T of dried Fruit and 2 T yogurt, 30 oz water

10:30 1 c butternut squash soup, 12 oz water

11:40 2 big handfuls of raw broccoli, cauliflower and carrots with 2T TJ’s tatziki 24 oz water

1:15 4 turkey meatballs with diced tomato 12 oz water

3:15 2 slices of dried mango and 4 walnuts 24 oz water (excellent I’m already at 102 oz of water today:)

5:30 1/2 cup butternut squash soup, 1/2 cup lentil stew, 2 cups salad with apple and carrot, 1 homemade walnut roll (30 oz water)

All I had at the business meeting was another 40-50 oz of water!

10:00 1 liver pill, 3 digestive pills, and 4 fiber pills (TJ Cleanse)  with another 20 oz of water

I did well for day 1…170oz water, and I’m very happy with how I ate. I didn’t have huge cravings and went to the bathroom less than usual ;)

Butternut Squash Soup

Here’s the recipe for the soup that Jennifer served at Bunco! I made it today with 1/2 the oil and no half-and-half and it was still amazingly good. Thanks Jennifer!
2 Tbs. honey
3 Tbs. canola oil or other light veg oil
2 butternut squashes (about 3 lbs.), halved lengthwise and seeded
2 yellow onions quartered
1 Granny Smith apple peeled, quartered, and cored
5 C chicken stock or low sodium chicken broth
salt and pepper (fresh)
1/4 tsp. fresh nutmeg
1/2 C half-and-half
Preheat oven to 450. Combine honey and oil in a small bowl. Line a shallow baking dish with foil and arrange squash, onion, and apple on it. Brush with oil/honey mixture. Bake for about 1 hour turning pieces at least once until all pieces are tender and well browned.
Remove from oven, let cool, then scoop out flesh and chop coursley. Chop onions and apple.
In a soup pot, combine squash, apple, onion, stock, salt 1/2 tsp, pepper 1/2 tsp., and nutmeg. Bring to a simmer over medium heat and cook for 20 minutes.
In a blender or food processor-puree soup in batches until smooth. Return to pot over medium heat and add in half-and-half. Adjust taste with salt and pepper.

9:45 2 carrots (a little less than 2 servings of veggies)

10:15 a cookie while shopping

11:30 leftover steak, shrimp, 1/2 c noodles and 1 c of edamame (2 servings of veggies), 2 piece of candy

2:30 apple and cheddar

5:45 butternut squash soup (2 servings of veggies), 2 small slices of baguette, 2 oz salmon, 1/2 cup edamame (1 serving of veggies)

almost 7 full servings of veggies :)
