Pork Smothered in Onions
This turned out fairly well. It’s a nice comfort meal with a little prep the night before. Then drop the whole thing in the crock pot in the morning. The original recipe is for four servings, but I cut it back to two servings. So I cut the cooking time down by an hour. The macros at the end are divided into sauce calories and pork (as I usually separate them then add in the raw meat amount). I did cut back a little from the original amount of oil (it was double).

Total for above (per serving): 482 cals (23g fat, 10g carbs, 2g fiber, 53g protein, 2g alcohol)
I served this with a side of mixed veggies which added another 60 calories for a nice easy, no fuss meal.
