321 calorie lunch

Well, it’s more like a 527 calorie lunch by the time I added the apple and the fruit salad. However, I think I’ve come up with a good substitute for the soup.

I took one small whole wheat tortilla (90) and added 3 oz of smoked turkey (88) and mustard (8) and since today was a lower calorie day I added 1/2 oz of mixed cheese blend (52), nuking it for about 30 seconds. The cheese wasn’t melted, but once I rolled it up it did melt. I took 6 oz of the veg from Costco (50) and 2 oz of the green beans (18) and roasted them in a 450F oven. Now, I know better, but I should have started with the cauliflower and carrots, adding the beans and broccoli later. I’ll fix that tomorrow. Although I sprayed the foil, I didn’t add any oil, just salt, pepper and garlic. I also used the powdered garlic instead of the chopped. Not really sure why, but it was a mistake. We buy the chopped garlic in what is probably a 6-cup container, so it’s not like I had to chop it or anything. When the vegetables were done (or slightly charred in the case of the beans) I sprinkled them with less than a Tbsp of balsamic vinegar (15).

The cheese is the added item that I probably don’t need, but like. On the days I can swing it (calorie-wise) I’ll probably add it. It added 52 calories, and 4 grams of fat. That’s almost half the fat, although it’s still only got 9 and that’s only 24%. I don’t usually look at fat content of something unless it’s the first time I’ve made it. If it’s higher than 25% I usually look to see if there’s a way to bring it down. Sometimes I don’t, just keep an eye on the rest of the food that day. Anyway, it was really quite a nice lunch. I’ve only done 30 mins on the treadmill so far, although I have done 15 mins with the weights. So I suppose I have some work to do in the afternoon.

justdeb - I like to cook, so it helps. I just have to focus on what I’m putting into the dishes. Eventually I’ll have to drop that second hamburger. I’ve already dropped the bun, so I’m working on it. It’s probably the highest calorie meal that I have. Tonight will be stuffed mushrooms with crabmeat. It was my only non-vegetarian meal when I was supposedly not eating meat.

And the weights - well, I suppose I’ll get used to it. I feel for the weight training I should probably go to a gym (and even work with a trainer). At the moment it’s just not financially feasible. I know that my form isn’t probably great, and I’m limited in what I do. Oh well, that’s something to work on for the future.

Dinner - hamburgers (2), roll (1), condiments, salad, salad dressing (891)

Snacks - protein shake, apple, fruit salad, salt & vinegar crispy minis (417)

Well, at least the snow has stopped. The lunch worked out okay, although I think tomorrow I may try roasting the veggies. I did manage to use the weights today for 20 minutes, so that’s also a good start.

leanmoomercows - for someone born and raised in Canada I really don’t like the snow. After all these years I still dread it coming and can’t wait until it’s past. I always remember when traveling south that Kentucky was usually the first start where you knew there wasn’t going to be snow. My father usually stopped in Lexington the first night. He was a man of habit. Lexington the first night, and then just inside the Florida border on the second night.

neverperfect - the yard looks much nicer in the summer, but most yards do.

skinnywanna - I only had to shovel from the back door to the barbecue tonight (which is a very small amount). Tomorrow is to warm up a bit, so hopefully some of it will go away!
