NYC pic and Cabbage Recipe

Haha!  Times Square! I am not in this picture, btw.  These are just random ppl.  This was taken on 10-15-09

OK….the cabbage and noodles recipe as requested….

1TBS olive oil

1 med onion, chopped

1 cup carrots, shredded ( I used the preshredded ones in the pkg)

about 3 cups of  green cabbage ( or more if you have it or like it heavy on the cabbage), shredded

3 cloves of garlic, chopped

about 1/4 c of ff chicken broth

8 oz pkg of extra wide egg noodles

2 TBS unsalted butter

salt and pepper to taste

1.  Heat lg skillet, and add olive oil.  Saute onion and carrots until they start to brown.   Season with salt and pepper.  Add in garlic. Saute for a few minutes, then add cabbage and chicken stock.   Season again.  Cover and let simmer until the cabbage softens.   Usually takes about 15 min or so.

2. Meanwhile, cook the noodles according to pkg directions.  Drain.  Add to the cabbage mixture and stir in two TBS of unsalted butter.

This can be eaten this way….1 cup = 4 pts ( makes about 7 cups or so)  or to make it esp. delicious, add either turkey smoked sausage or diced up ham slices.    Traditionally, it calls for bacon in the beginning.  I omit, so adding the sausage or ham in the end, helps make it more traditional.

    I’ll be making up a few characters so that it’s not totally obvious it’s about my crazy family. I think a cougar character could be intriguing, thanks for the suggestion :)

    The cabbage recipe sounds delicious also. I love garlic, I’d have to add more. More garlic, the better! …and jalapeno for the Sweetie. :)

    Glazed donuts aren’t my favorite, but I’m a sucker for the cake donuts. Ooo, the ones that melt in your mouth. And when we visit Cold Stone, I usually get the fat free or sugar free ice cream. I forget which it is, but then I add fruit to it. Mmmm….

    I think I could live in Ohio. Your climate is the same of MN, so it sounds from your writing. …what gardening zone are you in? The Twin Cities is zone 4. We can easily get to -40 degrees–colder than the coldest zone in Alaska! :)
