after all of that fried shit I ate yesterday I still managed to lose a smidge.
This morning we took J for his 6 month checkup and immunizations. Usually he gets a little fussy because he doesn’t really like being poked and prodded. Holy cow. This morning, you would’ve thought we were beating the crap right out of him the way he was screaming. Put me in a funk all day. I hate when my baby is unhappy. it makes ME unhappy.
Work is kind of a disaster right now. We’re having to improvise far too much and it’s not working too well. I snapped at one of the other decorators this afternoon and I didn’t mean to but like I said I’d been in a bad mood all day and so was she!!! We’re both on TOM so we’ve basically been circling each other and hissing at each other all week.
I left early today. I was like, you know what? I’m getting out of here. I left a whopping 30 minutes early but it still seemed to me like I’d been there for far too long.
Tomorrow is payday. yay!
I got my knives today! they are so sexy. I mean that. I am so excited about my forged santouku knives. I chopped onions and garlic and roasted red bell pepper and oregano and thyme. chop chop chop chop chop! It was very therapeutic. Now you all think I’m a weirdo.
today:
lunch: I just barely managed to sneak an LC chicken teriyaki bowl. Sandra was laughing at me because every now and then I would crouch down behind the counter so nobody could see me eating.
dinner: I made ravioli with roasted red pepper sauce. TASTY.
Roasted Red Pepper Sauce
1 medium onion, chopped
3 cloves garlic, minced
24 oz of roasted red peppers (fresh or jarred)
1 tbsp butter or margerine
1 tbsp oregano
1 tbsp thyme
1 tbsp sugar (*I used splenda)
In food processor, puree red peppers until smooth.
in medium pan, melt butter and add onions and garlic. Cook until tender.
Add pureed red peppers, oregano, thyme, and sugar.
simmer on medium low heat until heated through. Pour over cooked pasta (of choice, but it works well for tortellini or ravioli) and toss to coat.
This makes enough sauce for 4 servings of pasta!
I need to exercise more. I’ve been L-A-Z-Y lately.
tonight I’ll probably have a ww ice cream bar too. I think I’ll still be in my limit. More than likely.

Not weird at all about the knives! I love good knives. One of the most under appreciated items in most kitchens! My son is a chef and he’s taught me (or did I teach him?) the value of good knives. I use Cutco and sharpen them almost every time I use them. It takes a lot of the labor out of cooking. I have to keep my mouth shut when I’m cooking at someone else’s house to keep from bitching about their dull knives!
