Ohhhh my goooosh. Today just dragged ooooon and ooooon. I took a lunch break just to kill some time. I ate a small bag of salad and with some fat free dressing.
Not much to report today. It was payday and I whimpered to husband that I need some new running shoes so I got myself a new pair of shoes.
I’d been having daydreams all day long about cheeseburgers so the hubby and I calculated our behaviour this last week and determined that we could, in fact, splurge tonight and get cheeseburgers. Mmmm. whataburger. I *love* whataburger. I have to leave the room when I see a commercial. It is just…they don’t make ‘em like that in Canada. I used to miss Whataburger just as much I missed Rob before I finally moved here.
James, bless his heart, has been teething something awful. He is just one unhappy boy these days. mommy and daddy can amuse him but try as we may we can’t fully distract him from whats goin’ on in his mouth right now. My poor baby!
Today:
breakfast: n/a as usual
lunch: small bag of salad and 2 servings fat free italian dressing (for a total of a whopping 60 calories)
dinner: Whataburger (no cheese!) and medium fries. (a whopping 1100 calories)
So basically I’m set for the day.

I love whataburgers! Definitely a calorie well spent!
About that “diet” chicken parm…I mix half and half Panko breadcrumbs and this fake parmesan topping I get at Walmart or Meijer. It has very few calories and looks and tastes justs like parm. I dredge a boneless, skinless chicken breast in it. Breading is really high calorie but when you actually look at how much you use, it isn’t much and only comes to about 75 calories. I place the breasts on a broiler pan sprayed with Pam and broil them in the oven. After they brown on one side, I turn them over and broil until they’re brown on the other side then spread a spoonful of sauce on them and sprinkle them with WW fat-free mozarella. Broil a couple more minutes till the cheese melts and browns slightly.
As for the sauce, I make my own using onions sauteed with a teeny bit of olive oil, diced tomatoes, celery seed, tomato sauce, basil, thyme, oregano and splenda. Simmer for an hour or so until it’s thick. Of course, you could use any sauce that you like. If I’m in a hurry, I use a jar of store bought.
I cook whole wheat spaghetti and put anywhere from 1/2 cup to a cup on the plate, Spoon a little sauce on it, and top with the chicken.
This turns out really good and shaves a LOT of calories off of traditional chicken parm.
Oh yeah, I forgot, after I place the chicken breasts on the broiler pan, I spray them with Pam before I put them under the broiler.
