Breakfast Tray Bake
Serves 4
Ready in about 50 mins

454g potatoes, unpeeled and finely diced.
1 red pepper.
6 spring onions, sliced
frylight
seasoning
1/2tsp dried thyme
4 tomatoes, halved
227g mushrooms, halved
8 rashers bacon, all vivible fat removed
4 eggs

1 Preheat your oven to 200C/400F/Gas 6. Place the poatoes, red pepper and spring onions in a roasting tin. Spray with Fry Light, season and scatter over the dried tyme. Add the tomatoes, cut side up, and bake in the oven for 20mins.

2Add the mushrooms to the tray, push all the ingredients towards one side of the tray and arrange the bacon slices on the other side. Bake for a further 20mins.

3Meanwhile, spray 4 ramekin dishes wih Fry Light and break an egg into each. Place the ramekins in the oven for the final 15 minutes of cooking time.

4Divide the ramekins and contents of the tray between four warmed plates, and serve.

The picture above is the version of this recipe I made just now for my lunch. Yum yum!

I used normal onions instead of spring onion, and as I don’t like fresh tomatoes I served it with tinned tomatoes.

I have made it with the spring onions before and it is lovely with spring onions and normal onions :)

Homemade salsa

Difficulty- stupidly easy.

Syns- Free

Ingredients:
Tinned tomatoes
Onion- chopped up small.
Jalopeno Peppers- chopped up small
Red chilli- chopped up small
Fresh tomato- chopped up small
Artificial sweetner- 1 tsp
Red wine vinegar- 1tsp
Salt and pepper
Chilli powder to taste

Directions- mix it all up until you are happy with the taste. Add the chilli powder a little bit at a time until it is hot as you like, or leave it out if you want a mild salsa.
