Blueberry Muffins
You will need:
1-1/2 cups wheat flour
3/4 cup flax seed meal
1 cup brown sugar
1 tsp. baking powder
2 tsp. baking soda
1/4 tsp. salt
2 tsp. cinnamon
2 tsp. pumpkin pie spice
1 tsp. ground ginger
2 apples, shredded
3/4 cup nonfat milk
1 egg
2 egg whites
1 tsp. vanilla
1/2 cup blueberries
Nonstick muffin tin

Preheat oven to 350 degrees. Mix all dry ingredients together, except blueberries.

In a seperate bowl, combine eggs, milk and vanilla and beat for 30 seconds.

Pour liquid ingredients into dry ingredients. Stir and fold in blueberries.

Fill each muffin tin cup 3/4 cup and bake at 350 degrees for 15 to 20 minutes.

Makes 15 servings.

Well, tonight I had the option for a rest day or do the P90X stretch for an hour.  I chose to do the stretch.  I really hated it as I am NOT flexable at all but have noticed in just 1 week of doing P90X that I have improved my flexability a smidge.  I do think an hour is way too much of stretching BUT I must say that I feel much much better now.  I was extremely sore after doing Kempo X last night and doing Legs and Back the night before.  I hate yoga but feel this strange urge for inner peace and dont see how people get that from yoga but I am willing to try.  I will have to try this after I learn the routine it is hard to concentrate while having to look up at the TV every minute to see if we moved on to something else and I missed it. 

My problem now is finding the correct supplements that will work.  Beachbody has slimming formula and shakeology and protein bars and you name it, they got it.  I am not a rich person so I need something that works and is affordable and I know that is like an oxymoron but that is what I am looking for.  If anyone has used any supplements that work and are affordable PLEASE let me know!

Pancakes
You will need:
1-1/2 cups whole-wheat pastry flour
2 eggs, lightly beaten
1/4 cup canola oil
2 cups low-fat milk
2 tsp. baking soda
1/2 cup wheat germ

In a medium bown, mix eggs, oil and milk.
Stir in baking soda, wheat germ, and flour and mix until blended.
Heat a lightly oiled griddle or frying pan over medium-high heat.
Pour or scoop the batther onto the griddle. Brown on both sides, turning once.
Makes 10 servings.
Serving size 3 pancakes

Protein 8g

Use fresh fruit and a small amount of real maple syrup, honey or molasses as a topping; pancake syrups can contain corn syrup and other processed sugars that you want to avoid. Remember to add in the calories contained in your chosen topping when calculating your total caloric intake.
