I have officially made it to South Beach!

So here it is, Friday, and I have made it through five (count ‘em! FIVE!) days of Phase I on the South Beach Diet. I am TOTALLY LOVING the South Beach diet and wonder why I didn’t try it sooner! I’ve been on Weight Watchers since May, and after the urging of a friend, decided to try South Beach. In preparation for South Beach, my last three days on WW, I tried to cut waaaaay down on the carbs and felt like crap. I think that was my version of the “South Beach flu”. After I got over those few days, it’s been smooth sailing and losing! With the WW/SB combo I’ve been on for the last month and ten days, I have lost 16 pounds! Someone told me at work that they could see I was losing weight, wooo hoooo! And I DON’T FEEL LIKE I’M ON A DIET AT ALL. In fact, these are the dinners I’ve had for the past five days:
- Monday: Baked Chicken with Roasted Eggplant and Onions
- Tuesday: Buffalo Chicken Rolls (Chicken Breast Tenderloins marinated in buffalo style sauce, with light provolone cheese), pinto beans, salad
- Wednesday: Chicken Cheesesteak Saute (chicken marinated in italian dressing, sauteed with peppers, onions, and mushrooms, covered with light provolone cheese), pinto beans, sauteed spinach
- Thursday: Grilled Bison Burgers with light swiss cheese, sauteed onions and peppers, with South Beach “mashed potatoes” (mashed cauliflower with half and half)
- Friday: Grilled Fiesta Chicken (chicken marinated in fajita seasoning, grilled, and topped with light cheddar cheese, sour cream, guacamole, and pico de gallo) with South Beach Mashed potatoes
Now, does that sound like diet food to you? It doesn’t to me. And you’re even allowed to have DESSERT on this diet! I didn’t really care for the Mocha Ricotta Creme dessert that’s in the book, though. The chocolate in the dessert wasn’t intense enough for me. And aside at my attempt at Mocha Ricotta Creme, I haven’t had chocolate ALL WEEK! I guess that means hell is freezing over…or maybe my tastebuds and cravings are changing and the diet is indeed working
Ok, I know right about now I’m sounding like a South Beach testimonial/advertisement/some infomercial you hear at some ungodly hour of the morning on a random channel no one watches. It seems like Dr. Arthur Agatston knew what he was doing, though, because so far I’m super impressed.
I’m doing really well with my workouts, too. I’ve been to the gym four days this week already and am going tomorrow morning. I didn’t go Wednesday, but I did walk a mile in my neighborhood (Cuz my pedometer tells me so)! I downloaded all of my “Bootyshake Classics” onto my Ipod (Scrub Da Ground! I Wanna Rock! Too Much Booty In Da Pants! Shake Whatcha Momma Gave Ya!) and that’s definitely making the gym fun and keeping me interested. I also started weight training, to help get the metabolism good and revved up. Plus I want Serena Williams’ Booty! Well, I know that it’s not genetically possible, but I want as close as I can get.
I think this diet is going to allow me to hone my culinary skills while eating healthy. Who knows, maybe one day I’ll open up my own “South Beach Style” restaurant! What would be even better is if I could actually open it ON South Beach! (If you don’t know, I LOVE Florida.)
Five days down on phase one, nine to go. I know I’m going to make it. Ya’ll better watch out, ‘cuz I’ll be at my goal weight before you know it!

Woohoo! I have done SB in the past and also found it fairly easy to stick to. I hope it continues to be successful for you!
