UH-OH… return of the chicken taco salad!

i was absolutely addicted to this recipe back in the summer. i think i made it twice a week for the entire month of july. i was digging through some recipes, stumbled upon this one, made a quick trip to the store, cracked open a bottle of cheap wine, and long story short, it’ll be ready in three hours.
1 onion, chopped (50)
1 can black beans (315)
1 can kidney beans (365)
1 can mexi-corn (315)
1 can tomato sauce (140)
1 can diced tomatoes with chilis (90)
1 packet taco seasoning (90)
4 small boneless, skinless chicken breasts (400)
Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving, remove chicken and shred. Return chicken to slow cooker and stir in.
This is good eaten with rice (good girl.) OR cheese, sour cream, or tortilla chips (BAD, BAD girl!). The salad alone (w/out rice or chips) makes about 8 servings, for approx 225 calories per serving.

Mmm. Must try this sometime when hubby-no-beans is not home for dinner.
Thanks for the encouragement regarding my crazies. Many would say that I should probably medicate for this problem. ;-)

OMG!! That sounds WONDERFUL!!!! I will make it even when hubby is home b/c I’m not as nice as getupnow and I make my hubby eat beans!! :evil:

Yummy! It sounds wonderful but I’ve been sitting here trying to figure out how to translate this into low-carb for me! Hmmm… no beans, no corn, I could probably keep the tomato sauce but not the diced tomatoes… I would have to think of something that would give it “body” (like the beans and corn would) and that’s where I’m stuck.
On the other hand, I could have the cheese and sour cream, muhahaha!
I *WILL* figure out a way to use this recipe though! Thanks for the inspiration!
