Ranch Skillet of Eggs, Cheese, Potatoes, Sweet Potatoes, and Black Beans

Oh, my! This breakfast from PureFoods Fresh Start (gluten-free) of Ranch Skillet of Eggs, Cheese, Potatoes, Sweet Potatoes, and Black Beans was super yum!

I know the instruction sheet mentioned the benefit to heating up meals in the oven, toaster oven, or convection oven, but this was another that did just fine in the microwave (yay, me! That’s easy).

I did 45 seconds in a bowl (that’s one thing I’ve done, every time, that’s in instructions: REMOVE the food from the packaging, even though it’s microwavable), stirred, then did another 55 seconds, and let it sit for probably three minutes before I got around to eating it.

Gooooood stuff. I’m totally okay with PureFood’s love of sweet potatoes, even though Wii Fit did *not* give me good news today. Official weigh-in is tomorrow. I’m prepared for good news.

Pork Ragout, Spicy Roasted Vegetables, Baked Sweet Potato

Lunch — late lunch — was Pork Ragout, Spicy Roasted Vegetables, Baked Sweet Potato from PureFoods Fresh Start, gluten-free. I chose this one because it’s higher-calorie than some of the other dinners (390) and I have a full day of eating out tomorrow, and I may want to go light today. Or end my day with apple slices and roasted almonds. (Remember, I’m rounding out calories, because my daily delivery items are well under 1000.)

Okay, so this dish was the second, thus far, that fit on a big plate. Yay!

Again, the sweet potatoes were yummy (these were more chili-powder-sprinkled than last time) and the pork was probably about 2 ounces, which is wee for a meat dish (I chose to eat this thinking I needed to get some of my meat in for the week, and next time I’ll remember, this is very “light” on meat). Less onion-y than usual, but very pepper-y. In fact, the veggies were quite spicy this time, and that’s odd, since I think this combo exists in other dishes, less spicy.

Hmm.

Still, I ate every bite, ended up full and happy. Life is good!

Southwestern Skillet of Scrambled Eggs, Hash, Salsa, and Cheddar Cheese

I took a photo of the “before prep” situation and then re-read the carton the scramble came in and realized the salsa is already *in* the dish and this side container of salsa is meant for a lunch down the line. Glad I spotted that before opening it! :D

So, this was a breakfast of Southwestern Skillet of Scrambled Eggs, Hash, Salsa, and Cheddar Cheese from PureFoods Fresh Start (gluten-free) and it was just perfect. It’s one of the higher-calorie breakfasts and that’s a good thing, because after my Wii Fit workout this morning, my tummy was growling (and this encourages me into thinking I’ve turned my metabolism back on, due to starting up exercise before the diet delivery arrived and trying to eat more throughout the day).

45 seconds in the microwave on full power in a bowl, stir, add black pepper (my choice — I love pepper), another 55 seconds on full power, let sit one minute before eating.

The potatoes could’ve been a little more “done” (they were, let’s say “al dente”) for my preference, and maybe next time I’ll try doing this in the toaster oven for a slow heat-up, but I was REALLY hungry after my workout, so I didn’t want to delay. ;) Another dish with a few too many onions for me, but I did eat them all, so this wasn’t a case of “too many onions” like with some of the other dishes. Still, *heavy* on the onions, but it worked.

I should note that I have not had to salt a single thing, despite reviews out there on the web saying the PureFoods entrees need seasoning. With the exception of adding black pepper (twice so far) and a spritz of lemon juice, my entrees have been JUST right (but I rarely salt anything, ever, so I may be an oddball on that).

Very filling. Very tasty. So far, I’m thoroughly pleased with my decision to let PureFoods help me along with my weightloss goals (oh, and according to Wii Fit, I’m weighing in lower every day, but my official weigh-in will be Wednesday. Stay tuned)!
