About Elizabeth Spencer
The pen name of a 46 year old mom of 2 preschoolers, I’ve been overweight and out of shape for most of my life. I owe it to my kids and myself to get healthy!
I live in one of the top 10 healthiest states in the nation. That was a factor when I decided to come here because the most fit I’ve ever been I lived in another top 10 state. In between those, I lived in two of the unhealthiest states. It really does rub off.
I’ve been on a path of improvement since the millenium. Cigs went in ‘06 — finally. Diet has steadily improved, and now the past year, exercise is getting on track.
An example of food improvement. 8 years ago I made a sandwich with a thick layer of real mayo on both slices of not-whole grain bread, lots of meat and cheese and a bunch of mustard in the middle. Today, I used sprouted grain bread, mustard on one slice, 3 sprays balsamic vinaigrette on the other slice, 2 slices thin ham, 1 oz good cheese and a handful of lettuces. Occasionally a sandwich calls for mayo, but I use light now and very little of it. That’s what I call continuous improvement!
[June '09] I’m finding some help listening to a podcast called “Inside Out Weight Loss” - it’s on iTunes or personallifemedia.com It seems to be working on that mental part.
I’ve now lost 30 lbs since last year, 50 lbs from my lifetime high weight. 10 lbs to go to reach and “overweight” BMI instead of “obese”. 30 lbs to reach “normal”, which would be the least I have ever weighed since I attained this height.
