Ok, ok… I care
General June 7th, 2009I woke up this morning feeling like crap. That hasn’t happened in a long time. I’ll try to explain what I mean.. my stomach doesn’t hurt, but it feels… gross. It usually happens when I eat late at night or go to bed very soon after eating junk. I didn’t eat late at night, and I was up long after I ate junk yesterday, but I think it’s because I ate so much junk. Ugh… I’m not even going to go into what I consumed yesterday but let’s just say birthday party and alcohol.
So I do care about this despite the claim in my last post that I didn’t. Now I just need to get the energy and mojo to start doing somethign about it again. I don’t have any problem running.. it’s actually taking the time to cook healthy meals and making sure that I’m staying in my calorie range is what I can’t seem to get a handle on lately. I’m tired of cooking and preparing and..blah. I need a personal chef. I’ve been eating a lot of lean cuisines and stuff for lunches. I’m wondering if I should stop that for awhile and focus more on “whole foods” meaning non-processed stuff. Maybe that would help. Of course, that just means MORE cooking and preparing… and the frozen meals are portion controlled already. But they don’t last very long… meaning I’m hungry about an hour after eating them. I usually take leftovers but that only works if I actually cook… and assuming there are leftovers!
What do you other working women do for lunch at the office?

If you care ‘enough’ about your body and your future, you will invest time in food preparation to get there, darlin. It’s really that simple. You have to make YOU a priority, and part of doing that is taking the time to create meals that are good for you. What do I make for lunch? Two days a week I have tuna salad. I use the tuna in water (low sodium version) with enough low-fat mayo, a tablespoon of sweet pickle relish, and chopped onions. I put that on a bed of 2 cups romaine lettuce. (used bagged if you want.) That’s one hell of a tasty lunch! If you want a tad more, add 12 or so Low-fat Wheat Thins. The other two days (Friday’s is always lunch out with the girls) are generally a piece of skinless grilled (leftovers) chicken on the romaine, or a hamburger patty on the romaine. Yes, always the romaine because it’s the healthiest “lettuce” out there, by far. Two cups is two servings of vegetables. If you want, add 1/4 C. shredded (bagged) carrots on top. If you make the tuna salad part on evening, put in two plastic containers, and it’s set for two lunches. It really doesn’t take that much time.

Yay! Good to see you care, and that’s coming from someone who didn’t care herself for quite a while there!
I usually do leftovers for lunch or I’ll treat myself to a really nice salad somewhere or a piece of fish. But mostly, we make sure whatever we’ve made for dinner will carry over to lunch the next day. In fact, when we clean up dinner, the leftovers just go directly into individual tupperware containers so we can each grab our lunch portion & go in the morning.
Tonight’s not so healthy, but I’ll slice up some smoked sausage & heat that in olive oil with chopped onion & garlic, add chopped tomatoes, add chopped asparagus & sugar snap peas, toss in some fresh basil. Heat whole wheat rotini in another pan, combine, & yum! & no worries about lunch tomorrow.
& I always buy more green veggies (like the sugar snap peas) than I think I’ll need & then cook them off all at once. That way, no matter what craziness happens during the day, I’ve got good veggies for lunch guaranteed.

I can’t advise on lunch because I eat the same stupid thing day after day after day because I am just that pathetic. But I do like bigprof’s suggestion with planning for leftovers. The frozen thingies may just not be enough protein. Maybe that is why hunger resumes so quickly. The one thing about my stupid same lunch every day habit is that in my brain, I know that I can eat that lunch and not like die of hunger. My worst hunger is right before lunch. I think my special k just doesn’t cut it, but I am ok with hunger at that time of day. I can handle it. It is my night time appetite that destroys me.
I am trying to think of my favorite things to have as leftovers. Maybe I will post some to my blog later.

I’ve been eating those Healthy Choice steamed meal things for lunch. They’re in a bowl with sauce and they might be called “steamers”? I don’t know. Anyway, seems more filling than a regular little packaged meal. I know the packaged stuff is not the greatest option, but for me it’s the easiest and it keeps me out of trouble for the most part.
