I went up again over the weekend and then back down again this morning to land just two-tenths of a pound from where I was on Friday. It’s amazing that I lost weight overnight, though, because I ate mass quantities of food last night, ate until I was stuffed to the gills - and oh-my-God-it-was-so-gooooood!!
Do I feel guilty? Nahhhh. Though I ate a LOT, it was all good, low-carb yummy food, courtesy of TGI Friday’s. I love that restaurant! Here’s what I ate there:
I started out with those delicious deep-fried green bean thingies, for which I asked them to substitute sour cream for the funky green dip stuff that usually comes with it. My husband laughed at me again (he laughed last time I did this too) when I started eating them because I stripped the deep-fried breading off (or at least most of it) and ate the naked slightly-oily-very-tasty green beans inside.
My hubby is always raving about their cheeseburgers and I’ve never tried one, so I ordered one last night - without the bun and without the fries. With it I had a lovely side dish of broccoli - and I asked the handsome server-guy to bring me a little side-dish of alfredo sauce, which I poured over my broccoli to make it the most delicious broccoli side-dish ever. I ate my burger (and onions and pickles) with knife and fork and hubby was right, it was very tasty.
When the server-guy came to get our plates, he said to me, “Looks like you’re gonna need a box for leftovers?” I looked down, puzzled, because I had pretty much cleaned my plate - and saw the pile of empty-green-bean-breading-crusty things! I laughed and confessed to him that I’d eaten the beans but not the breading. “I’m on a low-carb diet,” I said. He smiled and said, “Ahhhh, no bun, no fries, no breading, I get it!”
So the point of this trip down dining-memory-lane? Besides the pleasure I’m having re-living it? The point is, of course, that this low-carb diet ROCKS! I can eat VERY cool stuff in generous quantities and still be on-plan! I love that!

I cooked again today! We went grocery shopping last night and I bought more broccoli to make another pan of broccoli-cheese-bacon casserole, and then I decided to make low-carb Cheddar Bay biscuits to go with it. Lunch today was a big ol’ salad with feta dressing and pine nuts, a slab of casserole and two biscuits.

CREAM CHEESE CLOUDS
8 ounces cream cheese, softened
1/2 cup unsalted butter, softened
3/4 cup granular Splenda or equivalent liquid Splenda
1/2 teaspoon vanilla or other flavoring
Beat everything with an electric mixer until fluffy. Drop by bite-size spoonfuls onto a wax paper-lined baking sheet. Freeze until firm, at least 1 hour. Store in the freezer and eat frozen.
Makes 24 clouds

Per 2 Clouds: 134 Calories; 14g Fat; 2g Protein; .5g Carbohydrate; 0g Dietary Fiber; .5g Net Carbs
Half a carb gram! I still can’t get over that! Next time I’m gonna make ‘em with pecans which will bring ‘em up to maybe one whole carb each, lol!

Thanks for the input and advice about the weightlifting thing! I still can’t really call what I’m doing “weight” lifting since it’s only 20 lbs. total, but hey, it’s a place to start. I went to www.bodybuilding.com and it took me a while to find it, but they have a neat search engine that I put in “dumbbells only” and it came back with a list of exercises to try. Cool! So here are the ones I’m gonna start with:

10:57 pm I just finished 30 minutes on the elliptical followed by 20 minutes of lifting and OMG I am now officially a wet noodle - sweaty and pretty much bloodless and weak everywhere! But I feel GREAT! I did all the lifts I got from the website (they were all good but the Iron Cross - man! - even with just 10 lb. weights, that one kicked my ass!!!!!) plus a few of my own making. It was good. =D
