Travel Menu: Breakfast Shake, Lunch Salad, Savory Snack, Dinner Salad

Since I will be traveling from very early to very late tomorrow, I decided to pack all my food and take it with me. This way I know I can get what I need when I need it.

Breakfast: I’ll be making a protein shake from OJ, yogurt, protein powder, water and ice. It tastes better than it sounds. I’ll blend it tonight and just shake it in the morning (so I won’t wake folks), then stir in my MUFA: 1 tbsp. Flax Seed Oil. I can drink this in the car.

Lunch: Nicoise Salad. I’ve packed this on the road before. It is yummy, filling and travels well! I pack the lettuce separately from the rest and mix them to eat.

Snack: Savory Hummus & Nuts. I packed this around in the car today while shopping all day. It travels well also. Very tasty.

Dinner: Pesto Salad. This travels well, too. It is also a little lighter than the lunch salad (nice for evening) but very tasty and filling, and contains nothing that will wilt by the end of the day, in fact letting the flavors blend improves it.

CALORIES 1583.3, CARBS 155.8, FAT 55.9, PROTEIN 124.4, FIBER 30.5

This menu puts me a little low on carbs and a little high on sodium. I’m almost always low on carbs, I can’t figure out how to get much more in without pushing calories up or protein down.

Sodium is something I’m usually low on but do need more than average. I would rather be low on sodium tomorrow though because Sunday is my 4 week weigh in!  And, traveling tends to put on water weight. I will try to make sure I keep drinking water.

Calories, fats, protein and fiber are all good. This should work for me and with my friend explaining “she’s on a diet” I should be able to get away with not eating the food.

It is an African wedding and I know if I can eat any food they will expect me to eat a lot - to be polite, you know. I’m trying to avoid having to wait for time to eat, or having to eat wrong foods or more than I want.

It looks like a good plan, we’ll see how it goes.

Ohhh, I love every bit of your food listed. Really, it’s all perfect and perfectly healthy. I wish I knew you and could come over to your house for good eats, like everyday!
