Favorite Menu: Tuna Salad Openface

I made this one up because I was craving something simple, more like what I *used to* eat! lol Today, when I ate it and logged it, I was so impressed. It looked and tasted GREAT, made me feel good, and turned out to be very good on counts, too.

You could use unsalted tuna but I need more salt, so don’t. I also really like mustard. The cucumber helps make it moist. It is also a LOT! ;-)

Make the “tuna salad” part ahead and chill. 

  • 1/4 c. onion, raw chopped
  • 1/4 c. celery, raw chopped
  • 1/4 c. cucumber, raw chopped
  • 3 tbsp. mustard, stoneground
  • 4 oz. tuna, chunk light in water, drained

Serve with:

  • 4 crackers, Kavli Golden Rye (30 calories each)
  • 1 cup carrots, mini
  • 2 tbsp.  pine nuts (or other MUFA)
  • 1 peach, large

CALORIES 425 CARBS 58.8 FAT 5, PROTEIN 32.8, FIBER 15

I served the crackers on the side and spooned little bites of salad on each cracker as I ate it. This is definitely going in my favorite lunches!

mmm I love tuna and ANYTHING that you can make with tuna..lol

I made up this tuna dish….. whole wheat pasta and steamed veggies ( broccoli, cauliflower, carrots, green beans, etc ) both cooked and strained…..put back into a small pot…half can of tuna..pepper….a tsp of low cal marg. and a small amt of light cheese..stir until the cheese melts…its great if you have a lot of points left and would like to have it for supper…it doesn’t sound too great but it really is even my bf liked it..lol
