I made this one up because I was craving something simple, more like what I *used to* eat! lol Today, when I ate it and logged it, I was so impressed. It looked and tasted GREAT, made me feel good, and turned out to be very good on counts, too.
You could use unsalted tuna but I need more salt, so don’t. I also really like mustard. The cucumber helps make it moist. It is also a LOT! ;-)
Make the “tuna salad” part ahead and chill.
- 1/4 c. onion, raw chopped
- 1/4 c. celery, raw chopped
- 1/4 c. cucumber, raw chopped
- 3 tbsp. mustard, stoneground
- 4 oz. tuna, chunk light in water, drained
Serve with:
- 4 crackers, Kavli Golden Rye (30 calories each)
- 1 cup carrots, mini
- 2 tbsp. pine nuts (or other MUFA)
- 1 peach, large
CALORIES 425 CARBS 58.8 FAT 5, PROTEIN 32.8, FIBER 15
I served the crackers on the side and spooned little bites of salad on each cracker as I ate it. This is definitely going in my favorite lunches!
