This turned out to be one of the best balanced menus I’ve had, is easy to fix and feels like eating comfort foods. I will definitely use it again.

Favorite Menu: Pesto Chicken Salad

1 cup Grape tomatoes, sliced
1 cup Artichoke hearts, canned, low-sodium, chopped chunky
4 oz. Chicken breast, pre-cooked, chopped chunky
.5 cup 1% low-fat Cottage cheese
1 Tbsp. Pesto sauce
Simple but very easy. I made this ahead and think it tasted better for letting the flavors merge. It left me feeling pampered, satisfied and slender. =)

Menu Today: Eggs, Salad, Yogurt, Talapia and ‘Taters

Breakfast: 2 eggs scrambled with no fat, 1 slice Ezekiel 4:9 toast, ¼ cup picante sauce, 2 T. black olive tapenade, ½ c. spinach from frozen, ½ grapefruit, 8 oz. Sassy water. (Next time I will skip the tapenade for breakfast and add either 1 T. olive oil or ¼ c. avocado.)

Extremely filling, tasty and cosmopolitan somehow. Maybe it is just the name!
2 tbsp. Dijon Mustard, Annie’s Naturals Organic
10 large Olives, black, large
1 cup, Red Potato with skin, diced and steamed
1/4 cup Celery, raw, chopped
