This is an awesome recipe! There are 8 large servings and with some healthy brown rice and a salad or veggies makes a great meal! I like to serve on whole wheat tortillas, but my daughter loves to eat it as a tortilla soup.

1 serving is equal to 1 cup of chicken and 1/2 cup of brown rice. The tortillas or what not are the extras.
2 pounds of boneless, skinless chicken breasts
2 tbsp taco seasoning(you can buy the mix in your spice isle but I have a natural recipe below)
1 cup low sodium petite diced canned tomatoes, with juice.
1 medium onion, finely diced( 1 cup)
1/2 cup finely diced celery
1/2 cup shredded carrots
1 cup salsa, home made or purchased
3 tbsp reduced fat sour cream(i like daisy)
Place the chicken in a slow cooker, sprinkle the taco seasoning over the meat, layer the vegetables over the mixture, set on low or medium per your slow cooker and cook about 6-8 hours. The meat is cooked when it shreds or reaches internal temp 165 degrees. When ready to serve, shred the chicken with 2 forks then stir in the sour cream.
