I slept like a baby last night. Out cold! I did not even last long enough to watch the first hour of American idol or Biggest Loser.

Well all we have to do today is wait till the appliances get here. I don’t mean to sound all Kate Gosselin but I just got that carpet in and sooooo don’t want the delivery guys to muck it up. So I had DH save a few long pieces of our old carpet to lay over the new stuff in a path to the kitchen. The kitchen floor can be washed.

I woke up starting to feel bloated, my lower back hurts, I am tired as all get go, and I am feeling a liiiiiiittle hormonal.  UH OH   DH will be glad he is at work today.

I made this roasted chicken recipe last night that my D-auntie gave to me. She got it  on holiday in France a few years back. I have NO idea what the calories are for this , or carbs, or fat, It is a basic recipe so I do not think it would be hard to figure out.

  •  3 Whole chickens (rinsed, pat dry with paper towel)  yes I have 3 roast chickens  written down there!  LOL  I have 4 boys/men to feed along with myself. Teenagers can pack away a HELLuva amount of food!
  • marinade ingredients:(((1/2 small jar grey poupon mustard.  juice and zest from 4 lemons, 4 TLB. light soy sauce, 1 TLB. each of thyme, rosemary, rubbed sage,  OR  3 TLB, of bouquet garni spice mix from France. 1 tsp. pepper
  • Mix all together and use hands to rub the marinade all over the chickens (it will stick)
  • Stuff the lemons in the chicken with any other cut up fruit (apples, oranges , pears) they will not be eaten but leave a wonderful flavor without calories in the meat.
  • Pour 4 cups water in bottom of roaster pan. COVER and put in a 350* oven for 20 each pound of the largest chicken you are putting in the oven.

I served this with a huge salad. I like to serve this with risotto when I have company.

I have a few minutes while my son puts his finishing touches on his book report. So I thought I would jump on here and see how everyone is doing. It is pouring rain here however by the end of the night it will be snow ,   again.    sigh  On the bright side of a dark, cold, gloomy day is that the candles that I am burning seem so much brighter and the house has kind of a homey feeling.

Since you mentioned TBL, isn’t it so much nicer this season w/o the nastiness? There’s nobody that I really want to get sent home every week…last season there were only a few people that I liked. I think it’s much more inspirational this way.

PS–Love the Kate Gosselin reference! She used to drive me crazy but either she has changed or I have b/c I can completely understand her need for control :)

Don’t you love new carpet and appliances? Makes the whole house feel new!

The last time I got a new stove, I noticed a small scratch in the top a few minutes after the delivery men left. They sent someone to take a look and decided to order a new top for it. When the guy came back a couple weeks later with the new top, he removed it and asked if I wanted to have him haul it away and I said, “No, just leave it.” I stored it in the attic for eight years and just recently got it down and DH took off the old top and put the new one on. I swear, the whole stove looks brand new!
