low fat chocolate cheesecake recipe

I have been making this for years, it is a winner. Simple and easy.  Even my husband loves it, it’s like he doesn’t notice it’s low fat/low cal. It comes in under 300 calories a serving.

Ingredients:

  • chocolate wafer cookies (i use chocolate animal crackers)
  • 1 bar (8 oz) reduced fat or fat free cream cheese
  • 1 cup (8 oz) lowfat or fat free sour cream
  • 1/3 cup unsweetened cocoa powder
  • 2 Tblsp. cornstarch
  • 3/4 cup sugar
  • 1 large egg plus 1 large egg white
  • 1/3 cup mini semisweet chocolate chips

1. Preheat oven to 325 degrees. Spray an 8 inch pan with cooking spray.

2. Use a chopper to process cookies into enough crumbs to cover bottom of pan. Press crumbs into bottom of prepared pan.

3. Blend cream cheese and sour cream until smooth.  Add cocoa, cornstarch, sugar, egg & egg white, blend until smooth. Pour into pan; sprinkle with chocolate chips.

4. Bake until just set, 35 to 40 minutes. Cool completely in pan. Refrigerate at least 1 hour.

yum that looks good! I’m saving the recipe. Does it work without the cocoa as a regular cheesecake recipe too?
