My dedication to Pho

I talk about pho a lot- I try to eat it once a week because one it gives me a break from cooking and TWO it’s DELICOUS as well as low fat and yummy! Since many of you have said you don’t know what it is I figure here’s my dedication to the yummiest and freshest tasting food!

Pho, pronounced fuh (like you are about to say the f-word to someone lol), is a vietnamese beef and noodle soup from Vietnam, if you are vegetarian there are places that do make vegetarian pho with vegetable broth :)

Usually when you order pho there are MANY MANY different varieties, different beef cuts: steak, fatty flank, lean flank, brisket, or shrimp and crab (pho tom), and I’ve also seen it with chicken and other meats I don’t care to mention… So you pick the meat you want, I usually prefer the thin slices of steak (pho tai), which are rare but as soon as it’s dipped into the broth it cooks instantly! So don’t be afraid if you go somewhere and it says rare- the hot soup instantly cooks it because it’s sliced thin. Then within the broth there are rice noodles and usually onion as well (YUM).

So it comes out looking like this:

A small tray comes with your order, it’s full of basil, cilantro, sprouts, lime, sometimes jalepeno, and so on:

This stuff you put in your pho, I load mine up with sprouts, lime, and basil.

I also put sriracha in it to give it a kick (the broth is actually pretty bland), usually there are a bunch of other sauces to try with your pho, hotter and milder but I think sriracha is PERFECT.

Put in a bit at a time till it’s the desired hotness you like, careful cuz a little goes a long way if you don’t like spicy! If you are new at it I recommend before putting any of your veggies to mix it in with the broth and see how you like the taste- it’s easier to mix in when you have no veggies in it.

And here’s your pho ready to eat!

My broth is usually pretty dark cuz I like it spicy :D You also don’t have to drink all the broth- I usually don’t, just a few spoons is good for me. And I eat it with chopsticks :)

I also eat the spring rolls with my dinner (this is usually my appetizer):

They are the BEST, fresh and very low calorie- full of basil, mint, spinach and pork, wrapped in a rice paper and eaten with a peanut sauce :)

So treat yourself- check out a pho house in your area- you’ll be pleased with the food I guarantee!

    Indeed when I still ate carbs I ate the noodles, (although even if low fat they are calorically dense).

    I’m a big fan of Spring Rolls — but I usually make them myself (no rice noodles which I think are tasteless). I’ve stopped making them because I’m doing low carb (althogh I should re-start because everyone loves them & I could wrap them in lettuce and be happy). Usually when I do I we do a kind of ‘make your own’ station where I’ve already cut into thin strips carrots, cucumber, meats, herbs (basil, cilantro, whatever else looks good), meats or shrimp, etc). A few bowls of sauce - usually a thai-ish peanut sauce (or one plain, one spicy of that) and another more of the traditional vietnamese dipping sauce, and then a plate of warm water and another plate of the rice papers. We gather the new guests around and show them how to make them and then everyone has fun.

    It’s always a big hit, because it’s yummy and fun. The French always have these really stuffy formal meals so my make-your-own taco night or make-your-own spring roll nights are always a fun change.

    …I too like it hot. If we have sriracha in the house I use it, otherwise I make do with the spicy stuff we have on hand (chili oil, ground chipolte, cayenne, tabasco, etc).
