I feel like I ran around like a chicken with my head cut off yesterday. I woke up and did my exercising and then started on the laundry and some online Christmas shopping while I watched the first half of the Cardinals Eagles game.
Then it was family lunch at my parents house which is a good half hour drive, so I left at half time so as not to miss too much football. My mom so liked the sound of the mini won ton cups that she made them for lunch with 3 different salads to put in them. One was a BLT salad, romaine, bacon, tomato and a dijon/mayo dressing, one was an oriental slaw with shrimp, and the other was a shrimp, mango, papaya, avocado, onion salad (this was my favortite!!!) I had one of each. I loved the last shrimp one, but I still liked my taco one at home better. I stayed for the second half of the game (it’s a win either way for me but I was actually routing for the Cards! I’m in love with Larry Fitzgerald!)
I had an errand to run at a store that is close to my mom’s house so I did that on the way home. Once I got home it was more laundry and football, but I also started painting a nightstand/shelf that my sister gave me for my daughter’s room. It’s going to look fantastic when I’m finished with it.
I have a fantastic recipe for homemade granola that my entire family loves and I wanted to make some last night and tweak the recipe a little bit to lower the amount of sugar in it. It calls for 1/4 cup + 2 TBSP of brown sugar and the same amount of honey. I had purchased some sugar free Torani syrup flavored brown sugar cinnamon and decided to use that as a substitute for both. The granola turned out fine, I think next time I will add the tablespoons of brown sugar and honey but use the syrup to substitute for both 1/4 cups. It tastes great, but just needs a bit more sweetness. It also calls for 1/4 cup of canola oil but this time I substituted peanut butter for the oil to give it more flavor. I think next time I would do part peanut butter and part oil because the oil helps it crisp up a bit. It got crispy but not quite as crispy as it usually turns out.
I know everything I’m getting my youngest for Christmas this year, and so far have only figured out 1 thing to get for each of her big sisters. They are so hard now. I can’t buy them clothes because I never get the right size or style so I have to give them gift cards, which I hate doing, even though they love it. They already have all the electronics they need. Uhhh, I will figure it out eventually, it’s just gonna take a lot of online research and some time to figure out. I need to think of something for my parents too. Christmas is stressful, haha, but I absolutely love it. It is my favorite holiday <3
Dinner last night was all about leftovers. I have to use them as much as I can because as a single parent with little to no help from my ex (seriously, it’s laughable!) I don’t have the budget to waste them. I used some leftover turkey sloppy joe, about 1/2 cup, and heated that up and served over left over salad, romaine and beans. I cooked the remaining brussel sprouts, about 1 cup, and stirred in some left over mushrooms and then because I had used 2 egg whites earlier I saved the yokes and just as I was taking the brussel sprouts and mushrooms off the burner I stirred those in for a creamy sort of sauce over the top. I love runny egg yokes and this tasted really good.
Weigh in was good this morning, although I started TOM so even though the scale showed a loss, I felt so bloated and heavy. Ugh, I hate TOM.
First I’m going to start by posting our dinner last night because it was truly delicious and fun and the kids loved it. I took wonton wrappers and lightly sprayed a regular size muffin tin and pressed one wonton wrapper into each cup and then lightly sprayed the tops and baked them until browned and crispy. Then we filled them with black bean refried beans, shredded lettuce, diced avocado, sour cream and shredded cheese. The little cups that it makes are super tiny but they only have about 20 calories per cup so you could make 3-5 per person easily and not go over calories. We had 3 each (4 of us, 12 muffin tin…3!) Anyway, I got the idea from Hungry Girl again. She stuffed hers with a BLT mixture but my kids and I love tacos so much that I thought little taco cups would be more fun. We had them with a side of the black bean refried beans…fun quick dinner.
Today, I had a volunteer thing to do. I’m on the board of the cheer booster club at the high school and our school was hosting an event and needed parent volunteers. I worked for 6 hours in the concession stand and it was absolute madness. Non stop line…like, literally, there were never less than 40 people waiting in line. We were selling out of things left and right, it was absolute chaos. I am so exhausted right now my body can’t wait to get in bed.
Tonight’s dinner before the girls headed over to their dad’s house was a quick and easy one. I cut up 2 big chicken breasts I had thawed in the fridge and sprinkled them with some paprika, cayenne, garlic salt and a pinch of red pepper flakes and stir fried them. We had that over a salad of romaine and white beans and used some of our left over taco toppings as well. I made a package of sugar free fat free chocolate cook pudding for dessert too. I just love warm pudding 🙂 If I have the chance I always buy cook pudding vs. instant. And I have learned the hard way that there is nothing like Jello brand…there are some things that I don’t mind getting generic but pudding is NOT one of those things.
Anyway, I’m exhausted and heading to bed early tonight! Have a great weekend chickies…my annual conflict football game is on tomorrow…home team Cards vs. favorite team Eagles…at least I win either way 🙂
Less than 2 hours and I’m off work for the weekend, woohoo!
I had to come on here and post because I made the most amazing thing for lunch today. I took some leftover quinoa, probably between 1/2 and 1 cup (I didn’t measure I just threw it in the bowl), some sauteed mushrooms, about 1 cup and some caramelized onions, 1/4 cup…got them steaming hot in the microwave and stirred in 2 wedges of laughing cow blue cheese until it was a creamy melty mess. Holy crap! It tasted like blue cheese mushroom risotto! It was so creamy and delicious, this is going to become a staple in my routine. I adore mushrooms and onions and the creaminess was just, I have no words, YUM!
Tomorrow I have a volunteer thing I have to do from 11:30am until 3:30pm, so there goes most of my day. I might try to take the girls to a quick movie after that before they head over to their dad’s house on Saturday night. 🙁 I hate when they leave, I am so lonely without them. But it will give me a chance to go through every one’s bedrooms and get crap out for a garage sale the following week. It will also give me a chance to get a little Christmas shopping done.

Little one woke up throwing up in the middle of the night again! Poor thing can’t catch a break. The only thing that I can come up with, and I have been wracking my brain on this one, is that it is her new mattress. She hasn’t been feeling all that great ever since we got it. I’m worried it might be moldy or something. It got a little damp during transport because of rain and I am not taking any chances. A replacement will be delivered on Tuesday. No one else in the house is sick and we all go to the same places, eat the same things, that is all I could come up with. My house is completely disinfected so I know it’s not flu or something…especially since this exact same thing happened last week!
So, I wasn’t able to get in a morning workout because I was dealing with that all morning. I will try to get one in this evening depending on how she feels.
I have been thinking about getting her a bike to keep at my house (hers is at her dads right now) as a Christmas present and the other night she mentioned wanting a bike and started looking at some online, so my choice was simple! I researched a few and went today at lunch and bought it 🙂 We have an empty office at work so I am storing it here until right before the big day! She will love it, it’s hot pink and she’s a girly girl! I’m still indecisive on the BIG gift for the older girls. I was thinking a new camera for my oldest because hers broke about 6 months ago, but she just bought herself an iPhone and I’m wondering if she just won’t use that for pictures. No clue for middle, she’s an enigma 😉

Dinner: Hungry Girl recipe honey mustard dipped pretzel coated chicken strips (for the record, I really liked these although I ran out of pretzels so they weren’t as “crispy” as I would have liked, but none of the girls liked them because none of them like honey mustard!), leftover potato soup (everyone liked this, although picky middle eater dug out the bits of chopped chive…strange!)
Lunch: greek nonfat yogurt, sugar free cinnamon candied nuts, dried strawberries, the last of the autumn soup, about 2 cups. I’m stuffed!
Dinner: ? I have nothing planned yet
Wednesday, yay, hump day! It’s past noon so I am now closer to the weekend than not! Yippee for weekends 🙂
This morning middle daughter had a 5:30am cheer practice so I was forced to get up and out of bed before my usual 6:30am alarm clock wake up. Like I have mentioned before, I am most decidedly not a morning person. I get up at the last possible second all the time. So this one was a killer for me, but I knew I had to do it. We actually had to leave a little earlier than I normally would because one of the girls on the squad needed a ride and I (reluctantly) said I would do it. I planned on getting my workout in before work today since I was going to be up anyway. *side note – the 6 week challenge I am participating in at work has a different weekly challenge each week, along side the regular rules. This week’s challenge is 100 sit ups and 50 push ups every day* So I got home and got into my workout clothes and did 25 sit ups, 25 push ups, and 25 more sit ups so I am half way done for today already. Then I bundled up to head outside and get my walk on. I know I will sound like a cry baby to anyone that lives anywhere else, but damn it was cold outside! I had on my workout capris, a t shirt and a hoodie sweatshirt over that, I put on gloves and put the hood up and tied it so that my face barely peaked out! My calves were frozen by the time I got home, but I am so glad that I am done with my work out for today already 🙂 I will do it again tomorrow because they have another early am practice.
Lunch : leftover autumn soup and leftover quinoa that I mixed with some mushrooms and onions that I had sauteed a few days ago.
Dinner : turkey sloppy joes! YUM! on a whole grain sandwich thin, mandarin oranges, about 1/2 cup-1 cup

Obviously I did not make it back on here last night to post my meals. My life got crazy yesterday at about 4:30pm. I found out that we had to file a motion and order with exhibits THAT DAY and I knew it was going to take over an hour to get it prepared and filed so the attorney and I were at work late doing that.
Over the weekend middle daughter went to a birthday slumber party for one of the girls on her cheer squad and since only one of the girls on the squad decided not to come the other girls decided it would be funny to go toilet paper her house. I’m sorry but millions of teenagers every year TP houses and it’s all in fun…hell, I’ve had my house done at least 20 times in the past 4 years that I’ve had teenagers…and while, yes, it’s kind of a pain in the butt to pick up, I do not for one minute consider it to be “defacing” my property. I know this seems off topic of my crazy day yesterday but bear with me I’m getting there…this all exploded yesterday at school because that girl had her parents go to the school athletic director and tattle on the other cheerleaders and I find this absolutely ridiculous. This event had nothing to do with school, or cheer, it did not happen on school grounds, it did not happen during school hours, so how on Earth can the school set out a punishment??? All the girls have been “benched” for 1/2 of the first basketball game. What in the hell is the world coming to that you can’t handle a teenage joke??? Honestly, I am so angry about this.
My oldest daughter was late coming home from work so I text her to make sure everything was OK, wondering if she was having car trouble and generally asking when she was coming home. She told me there was an emergency at work and she had to stay late but was on her way home. She works at Dunkin’ Donuts…what the heck kind of donut emergency could they possibly have had? So once she gets home she tells me that the manager hadn’t been feeling well and stayed in the men’s room throwing up and was all red faced and sweaty and came out and told them to call 911 because he thought he was having a heart attack. So the ambulance and firemen came out and in the middle of the lobby did a bunch of tests and shaved his chest and attached sensors all over him and he apparently had to have emergency surgery last night! Poor man, he is the nicest guy. I’ve met him when I’ve gone in to see my daughter at work and get a free iced coffee (do you have any idea how hard it is to walk in there??? It’s Dunkin’ Donuts after all!!!) He adores my daughter, every time I go in he tells me that she is his best worker 🙂 That always makes me feel good!
So…here are my meals from yesterday. Finally.
Lunch: leftover baked potato soup, 1cup, topped with 2 tbsp fat free cheddar, and 1 piece of crumbled bacon, salad (romaine and white beans) with 2 tbsp of homemade light ranch and pretzel sticks for crunch.
Dinner: due to the fact that I had to work late my sister had to pick up both of my younger girls so when I got to her house to pick them up she had made us all dinner so we stayed and ate with them. We had homemade autumn soup. This is my Gma Annie’s recipe but it basically consists of chicken stock, celery, carrots, ground turkey (Gma uses beef), diced tomatoes, diced potato and ditalini (my favorite little noodle!) So I had a small bowl of that, about 1 cup, and a very small piece of the french bread she had warmed to go with the soup with 1 tsp of smart balance spread.
Here is hoping that today goes much smoother!
So, yesterday was the big game that I had to beg, borrow and steal to get my stubborn ex-husband to let me have the girls because I had already bought tickets as one of their Christmas presents. The first 3 quarters of the game were probably the most boring 3 quarters of football I’ve ever watched. But from then out it was excitement city! I had 3 wishes that I wanted to come true while at the game:
1. Watch Larry Fitzgerald catch a touchdown pass
2. Watch one of the Cardinals catch and return a punt for a touchdown
3. Cardinals win!
I am such a happy football girl today! All 3 of my wishes came true plus more! I mean for one thing how often does the field goal attempt actually get blocked??? Rarely ever. Yet, my boys pulled it off to save the game and head into overtime. I have no voice today, I screamed my bloody head off!

Ha! I was the flipping babysitter for my drunk friend and all her friends! I was the only sober person at the table. They were all so obnoxious that we even got kicked out!!! It was embarassing. My friend wanted me to meet her boyfriend and I really didn’t have anything planned except watching my new DVD so I decided not to be a party pooper and to get out and be social. I did get a kick out of watching them make fools of themselves at least. My friend, who absolutely detests seafood of any kind, was so drunk that she ate sushi. She did not believe me this morning when I told her. I wish I had taken a picture of it, haha!
I just finished lunch for today. I made a recipe from a website that I stalk regularly. Baked potato soup. The whole bowl I ate was less than 200 calories and I’m completely full. It was warm and creamy and absolutely delicious. Sour cream, cheese, bacon, chives…all the regulars were there! Here is the basic recipe for you ladies to try:
2 medium sized baked potatoes cooled and peels removed (I used yukon golds and just nuked them)
1 head of cauliflower cut into florets and steamed til tender
1 1/2 cups chicken broth
1 1/2 cups low or non fat milk (I used 3/4 cup non fat and 3/4 cup 1%)
blend that all in batches in a blender or use an immersion blender.
Once it’s blended and creamy put it in a pot on the stove and add 1/2 cup light sour cream and 5 tbpn chopped chives. heat about 5-10 minutes and serve. top with crumbled bacon(I use the precooked bacon because it already has a lot less fat…you could use turkey bacon too) 1 tbsp of chives and 2 tbsp of shredded fat free cheddar. Totally filling and delicious and healthy! YUM!

I was not able to get a good night’s sleep last night to catch up for getting next to none the night before. And I am paying for it today. My head is absolutely splitting. I know I need to workout after work today but right now my head hurts so bad that I just don’t know how I’m going to get through it.
I’m excited for tomorrow because Drew gets to start the 2nd 6 months of his year long insanity of fit2fat2fit. If you don’t know what I’m talking about you need to head on over to www.fit2fat2fit.com and read his blog. He is crazy, but I can’t wait to watch and read about his journey back to fitness. Really, go read it.
Today was rent day, which is never fun, haha! I hate handing over all that darn money and I hate taking an hour and a half off work to get the payment processed.
Both of the partners at the firm that I work for are into triathlons, marathons, crazy athletic crap. You would never guess that by looking at them. One is tall and very lean, I guess he looks like a runner, but the swim and bike are difficult for him. He’s finished several Ironman triathlons, and even ran an ultra marathon, 100 miles (took about 24 hours-can you imagine running for that long??? No thank you!) He’s one tough nut though. He just got back from a 55 hour hell at Sealfit training. He graduated. 55 straight hours of being berated, pushed to your physical and mental limit…and he PAID for it! Nuts. The other partner doesn’t look like he has an athletic bone in his body. He’s sort of short and chubby. He is in Florida right now for the Ironman tomorrow. He hasn’t been training this time so we’ll see how he does. He’s a great biker, but the run kills him. I will be tracking him online…he worries all of us. They are both really young guys. Lawyer 1 is 38 and Lawyer 2 is I think about 32? Typical lawyer over achievers, ha!
Anyway, I had my protein bar for lunch today because I never get a chance to have a real meal on rent day because I’m driving all over timbuktu!
Yesterday was a great day. I had good food, I got in a workout, which isn’t typical of a Wednesday for me. But it went downhill after bed. I got a tap on the shoulder at 2am by my littlest because she had diarrhea and was vomiting so badly. Back and forth for over an hour from bed to bathroom and we finally got in my bed around 3am. 3:15am she bolts upright and starts puking all over my bed, sheets, comforter, floor, her, me…it was U-G-L-Y! I got her cleaned up and situated in the bathroom and then went to tackle my bedroom. Changed the sheets, cleaned the floor, took everything out of the room that got nasty and we finally got back into bed but neither of us could sleep so I suggested we lay on the couch and put in a movie to see if that would help us fall asleep. And she’s puking again…finally settled on the couch watching Toy Story 3 and she’s out like a light and it’s 5am. I, on the other hand, can’t sleep and lay there until about 6:15 when I snuck off to my bed for about 20 minutes of sleep. Holy crap, I am so tired, I can’t believe I am even functioning right now. It will be an early night for me for sure.
Lunch – left over quinoa and 2 turkey meatballs, salad (romaine, black beans, chicken breast) 2 tbsp homemade light dressing, 20 crushed pretzel sticks to simulate croutons. I just need something crunchy on my salad 🙂
