I am so frustrated because I feel almost normal — my body is really stiff and itching to exercise. However, if I talk a lot or move around a lot, I start to cough, which makes my head and throat hurt, and I get out of breath easily. I am drinking tons of water, and trying to talk and move as little as I can manage, while still being Josh’s mommy (which is challenging).

I had some really old white tortillas in the freezer, and decided to use them to make “crackers,” as I had seen in a magazine recently (the mag actually said to use wonton wrappers). I used the “fall” cookie cutters I have the shape them, then topped them with cooking spray and a variety of spices, etc.: sesame seeds and a dab of sesame oil; cinnamon, nutmeg and a dab of sugar; curry powder with a dab of cayenne pepper; parsley flakes with black pepper; and onion powder and garlic powder. I baked them for about 10 min. at 375*. The sesame ones were the best. I cut up the tortilla scraps and baked them with some salt (I’m going to use them to top a mexican salad later in the week). I hope to use whole wheat tortillas next time.
I had about 12 of these crackers throughout the afternoon.

I also made some homemade applesauce, which I’ve never done before. I was on the computer and forgot about so I burned a lot of the apples. It ended up making about 1/2 c of edible applesauce — it was okay.

1 c green beans (baked w/ cooking spray, salt, pepper) with 1 TB slivered almonds
