We had a crazy storm roll in about 12:30 last night - got an inch of rain in 30 minutes, big hail, hurricane-like winds, some tornadoes. Insane! It woke DH and me up and I had a hard time getting back to sleep. I think I’m functioning on about four hours of sleep. Thankfully most everyone is out of the office due to our customer event so I should have minimal interaction today. Tonight is our dinner in which I get to wear my dress. I’m sooo not looking forward to this dinner. I don’t communicate with customers directly so I know none of them personally. But being there will score brownie points for being a “team player,” so I really need to go. Unfortunately I have no idea what will be served so I’m eating light today in anticipation of not very good offerings.

SPEAKING OF FOOD. I made the best BEST chicken sandwich last night for dinner. (Renee, I’m finally having my sammie!)

Pesto Chicken Sandwich

  • 2 oz french baguette, sliced in half length-wise (I bought mine from Panera)
  • 4 oz chicken breast
  • 1 Tbsp store bought pesto (I think Bertolli brand is the best)
  • 1 oz fresh mozzarella cheese

Grill and season the chicken breast until it’s mostly done. Spray olive oil cooking spray onto the bread and place on grill to toast. When it’s almost toasted, top with the slice of cheese and let it melt. Bring it all inside, and place the chicken breast on one slice of bread and spread the pesto on the other slice. Put together. Eat. Enjoy THE BEST FRIGGEN SANDWICH EVER!

It was enough to make me very full. I actually halved my chicken breast so I could make another sandwich for lunch today. I have Cooking Light to thank for the inspiration. I was supposed to have this on Sunday night, but we did the pizza instead. Honestly… alright, I have a love affair with pizza. THIS sandwich was better than pizza. And less fat/carbs, too. Yum.

Now I can’t wait for lunch time!

I went running yesterday. My knee is feeling MUCH better. I don’t know if it’s the advil I took beforehand or if it’s just feeling better, but it didn’t start really bothering me until the last 5-6 minutes of my run. I did speed work yesterday. I cut my mile time down to 10:40, but I pooped myself out so much that I didn’t have any energy left for the last 15 minutes! Usually I slow down and let myself recover going down hill, but I kept up the speed. It was a great, great run. I love runs like that. On Wednesday, I’ll slow it down to my regular pace and attempt to run the whole neighborhood route. I think I’ll do the 5k at the park on Saturday morning - I don’t like going in the afternoons since it’s tourist season and they don’t give a whip about obeying the no parking in the run/bike lanes, which causes me to run in traffic. And they’re not paying attention to the road because they’re sightseeing. It’s just a liiiitttllleee too dangerous. In the mornings, only the exercisers are there, and it’s much cooler.

Ugh, ok. I need to get started on work.

Oh! I made my “business dinner” goal (It was 175 - I was 173.8 this morning). Which also means… gold star for 40 lbs lost. Awesome! I’ll make DH take photos of me tonight for progress and in my cute little black dress!

Now I’m really starting work.

Congradulations on so many accounts! Firstly 40lbs.. you are doing so well and I am sure you must feel amazing! Secondly, on your knee not hurting and for having an amazing run yesterday. I’m looking forward to seeing you in your fancy dress!
