Can I move to Steamboat?

Seriously, I may complain about the cold and snowy weather here, but Colorado has got to be one of the most - if not THE most - beautiful states in the lower 48. I loved everything about this weekend. I’m not a car girl, but I may as well be after seeing all of the beautiful vintage and new (even the 2010) Mustangs on Saturday! Alright, where should I start. Friday night went well. I did eat some of the brie, but not a whole lot. Just had 4 oz of pollo asada with the fixin’s of guac and salsa. A small piece of tart. Down slightly in weight on Saturday morning lol. We got up at 5:45 and left the house by 6:30… made it to Steamboat around 10:30. We walked around for 2 hours and looked at maybe 500+ cars, ate some lunch (I had packed a picnic lunch so I had just salad and a few bites of leftover tart), met up with DH’s coworker and his wife and made plans to meet up for dinner. It was only about 1:00 at this point and we couldn’t check in to the hotel until 3 so we decided to check out Fish Creek Falls. Well you have to pay $5 to get in so DH thought we should just go hiking that afternoon. After already walking for 2 hours! I hesitated, but decided to do it anyway. Oh. my. gosh. It was the hardest hike I have ever done. We gained 2400ft in elevation in 2.5 miles (5 miles round trip). Very steep. Very rocky. The upper Fish Creek Falls was GORGEOUS, though. I’m glad we did it. But we didn’t get to spend much time there since it was already 3:00 when we made it to the top, so we came back down and made it down in an hour. Ugh! 3 hours of hiking plus 2 hours of walking! I wanted to die! I was near tears when we got to the hotel room haha. We went to dinner at the Tap House and I think DH and I were asleep by 9:00 lol. Sunday, we got up and had some breakfast and walked around town for a bit. Then we headed back down to Denver and walked around the mall for awhile, trying to find my father in law a present. We settled on some chocolate. Met them for lunch and headed home. REALLY tiring weekend, but so much fun!!

I did something interesting in terms of food this weekend. On Saturday when we went to dinner, I was so exhausted and famished that I just said, you know what, I’m not going to fret over choosing the right thing. I’m just going to go with what I feel like, but I am going to pay attention to how I feel when I’m eating (i.e. satisfied, full, stuffed, etc.). Well, that ended up being 64oz of water, three hot wings, and one chicken finger. After that, I was like..meh, I’m content. Same with food yesterday. I made a breakfast sandwich at the hotel out of an egg patty, a piece of sausage, and half of a bagel.. that kept me pretty full. For lunch I had grilled chicken with marinara sauce and hmm….maybe half of the spaghetti, a third of a garden salad. And all water or iced tea (no soda… amazing!!) It just feel so good not to worry about eating, and yet still see that I did alright when it came to it. It gave me some confidence for when we go to Mexico next week! Although I am up slightly this morning (1/2 a pound), I am always up for a few days after we do a long, strenuous hike. So I plan on exercising all 6 days this week and I should be somewhere around 177 by the time we leave on Sunday. Very exciting!

I get so jealous looking at your hiking pictures! Colorado is just gorgeous. Sounds like you did an AMAZING job this weekend food wise, and with all the walking and hiking you did, you could of easily told yourself you could eat anything you wanted in big quantities. Sounds like your diet is no longer a diet but becoming a lifestyle. Good for you!!

Breathtaking…..you did GREAT this weekend!!!! because you know what, the weekend wasn’t all about food, it was about the scenery, cars, and spending time togehter! Girl, you LIVED this weekend! congrats!

It was the perfect weekend (except the part where I was cursing trying to hike up the mountain, lol!) But I really did have a great time. I thought the car show would just be so-so, but I had a blast. Next year we decided to do Friday- Sunday because it was a lot to do in 24 hours, but I’m already looking forward to it! :)
