I left the house this morning for work already in a GREAT mood - I’ve officially lost 30 lbs! My mood was even better when I saw the sun peaking over the horizon for the first time since, like, last Friday! Seriously, it’s rained every single day since then. I am grateful for the moisture since we didn’t have that much snow this winter, but man… I am ready for some summer weather, please! Backing out of the driveway, I happened on an injured fox who was limping across the street.
He paused long enough to take a potty break in front of our house LOL. Poor little guy. I hope he wasn’t hit by a car or anything. As my hubby pointed out, he was feeling good enough to leave us the nice present, so he couldn’t have been too hurt.
I actually did not end up running yesterday. It was windy, cold and looking like it was about to rain, so I declared it a “rest day” and took a nap, haha. I did end up doing a 30-minute upper body strength DVD which really kicked my butt. My body must have appreciated the rest since I hit 183.6 on the scale this morning. Finally, some good movement in the right direction!
I made this really yummy asparagus salad last night. The original recipe is from Kalyn’s Kitchen. I just roasted a bunch of asparagus with a little olive oil (450 degrees for about 15 minutes), tossed in some feta cheese, kalmata olives and diced tomatoes and dressed it with an olive oil/lemon juice/greek seasoning dressing. It was SO tasty…much tastier than the rice/chicken concoction I tried to make last night. Apparently, I just need to BUY yakitori sauce instead of trying to make my own. But hubby wolfed it down, so I guess it couldn’t have been too bad. Also, yesterday I tried the 4-5 small meals per day. It worked out well except for feeling hungry in the evening. I still had 150 cals left for the day so I ate some ice cream. Still, I kind of miss the big dinner time meal. Tonight, we’re having steamed artichokes and baked garlic/basil polenta. I’d like to try incorporating a meatless meal once a week, so we’ll see how this goes.
